What do do with broccoli
I've got two heads of broccoli, and I was going to make broccoli/cheese burritos. But husband doesn't want to eat mexican inspired food 2 nights in a row. I need something that uses ricotta and broccoli and is under 400 calories a serving. Any suggestions?

That recipe sounds delish. I would add chicken like the poster suggested for a one-dish casserole. I am definitely gonna try this one!

Have I mentioned lately that I love this website? You gals are the best! Now- how to choose between the two dishes? They both sound tasty!

I use broccoli in things like shrimp scampi or white clam sauce. I still have a small portion of pasta but instead a big portion, the rest is crispy steamed broccoli. It's really good and I don't use a ton of oil or butter, so pretty healthy too.

I would skip the ricotta and roast the broc in the oven YUM!

I made the broccoli alfredo. It was pretty tasty, but I think I went a little over on my calorie counts. I wasn't very good about measuring last night.
The lesson? It's always better to stick to what you've planned! I think my burritos would have been tastier. The broccoli, though, was delicious! Fresh from the farmers market. |
I would add more veggies (bean sprouts, snow peas, etc) to the broccoli and stirfry them.
