I love, love eggs! I think I'd also put one whole egg in with a couple white, my personal preference. I also buy the store brand of eggbeaters. Alot of food for very few calories, when combined with veggies, as you all do. As an occasional treat, I put a few pieces of fat free cream cheese in with my eggs, i LOVE that.

When I was bringing my lunch to my icky work place, it was sauteed red peppers, green peppers, onion, spinach, chopped cabbage, and eggbeaters mixed together. My idiot boss would mock me for the large container of food that I was eating, insinuating that I'd never lose weight because I was pigging out on so much food. while he was always hungry on his NutriSystem. Nothing against NutriSystem, just don't mock me for having the knowledge and initiative for buying whole foods and cooking!

sorry for my rant 'chime Glad you found a yummy food you like

I love egg whites! I'm thinking about using them to make French toast. Has anyone tried this?

Yes, one of my favorites not just for breakfast!

- 1 Egg & 3 Egg Whites
- 2 oz left over chicken breast
- Onions, red peppers, garlic, parsley, Feta

This is my fav but there are endless options, I even used some leftover smoked salmon...yummmy!

A little meal I have affectionately called Mexicana Mix is really great! You should try it. I have it for dinner a lot and it's filling and super healthy!

1/2 cup of egg whites (4)
2 oz of cut up cooked chicken breast
Small handfull of chopped green and white onion
Small handfull of chopped green, red and yellow pepper
Fry it up (cook the eggs first) with fat free non-stick spray
Add salsa and viola...
If you want a bit more carbs, I add in a little rice!

Egg whites are also a great coating for foods. I often will dip cut up potatotes into egg white and bake them for what tastes just like french fries...crunchy without the fat
Great Idea about the egg white coated potatoes! I am definitely going to try that!

My fave breakfast -

one whole egg, one or two egg whites - put in micro-safe bowl (sprayed with a bit of Pam) - pierce yolk with tip of knife, wrap bowl in paper towel. Microwave for a minute or so. Toast an english muffin, spread with one wedge of laughing cow light cheese, add cooked egg and YUM! Under 275 cals, and very quick.

I always use 1 egg 2 egg whites for my breakfast. I think the benefits of the nutrients in the egg yolk outweigh the cal/fat content. So that's why I just have one tho. 1 egg yolk and I get all the super healthy nutrients, but I don't eat two because I don't want that extra fat from the second egg! Plus the egg whites make it more filling and give me that extra protein boost with no extra fat! These type of small changes will all add up!
