What are you cookin for Easter Sunday?

So, this is a challenge for me. I usually just cook a whole bunch of yummy food, don't worry about what we are eating, and stuff ourselves, and then have the leftovers for diner again that night. But this year, I have been doing some searching for Low-Cal recipes that fit into my calories alloted per day. I think we are having a Ham, Yams, and then a veggie, and then trying the blackberry cake that I found on this website. What are you having?

Roast Cornish game hens with wild rice, mushroom, and barley stuffing
Deviled eggs
Whole-wheat challah
Mashed chipotle-maple sweet potatoes
Steamed asparagus spears with hollandaise sauce
Apple pie

Rosinante 04-08-2009 05:12 PM

Roast chicken, green veggies, roast potatoes.
Don't really do desserts.

When I was a child, chicken was Really expensive, it was the real treat meal that we just had twice a year, Christmas and Easter.

WhitePicketFences 04-08-2009 06:36 PM

Chicken Cordon Bleu and steamed asparagus. Chicken breasts (ultra thin for me) rolled up with one slice each of ham and asiago cheese. I usually do a fatty sauce but obviously now I won't be ... no heavy cream, no egg to roll in would be good too. I wonder if plain yogurt would go well?

Skipping the sugary lemon bars this time. I actually would, and just abstain, but I am baking for something else (a low sugar birthday pie later that same week) and do plan to have a small slice of that.

Su-Bee 04-08-2009 07:39 PM

I am making a turkey, stuffing (using broth instead of oil), broccoli rice casserole, mashed potatoes & cauliflower, green beans, & for dessert, cheesecake dip (which is surprisingly not nearly as diet-killing as it sounds!).

Easter will be hard for me. My Aunt is the family cook. She adds butter to everything. I just might take my own food over.

BarbPA 04-08-2009 10:22 PM

Not a clue. :dizzy:

prinny 04-08-2009 10:39 PM

We are skipping easter this year. Not that it matters anyway since we are agnostic. Will probably just order something since we are having people over.

hpnodat 04-08-2009 10:48 PM

My job is to bring a dessert. low Cal Strawberry Shortcake. :)

Horo 04-09-2009 09:56 PM

My mother is doing the usual ham dinner meal, of which I'm going to help her cook, of course. I'll only actually be eating some ham, some beans, my own side of fruit, and a home made roll(hey-can't pass those up.) Dessert is going to be chocolate crème brûlée, which
I wouldn't pass up even if my life depended on doing so, but I've got it all planned in so there's no worries here. :)
(We're also making potato salad, brown sugar and butter loaded sweet potatoes, etc. but I luckily have always found these caloric atrocities to be repulsive. )

Thighs Be Gone 04-09-2009 10:07 PM

Stuffed Pork Tenderloin, green beans, smashed cauliflower. I might, just MIGHT fix homemade dinner rolls if we feel like being bad.

Not traditional but my family's favorite--PUMPKIN PIE for dessert!

Esmeralda 04-09-2009 10:10 PM

My family doesn't have any special plans yet, and I already know that I'm working. It should be fairly easy to get away with not having a huge dinner fest. And if my mom decides to cook something (once in a blue moon), I'll just have a teeny bit and a BIG salad.

LandonsBaby 04-09-2009 11:18 PM

I don't have to cook that day.

sws19 04-09-2009 11:23 PM

i'm having people over for easter brunch even though i'm jewish cause i love entertaining:chef::hun:. think i'm gonna do a giant egg scramble with melted pepper jack cheese and onions and peppers and then skillet potatoes, spinach salad, and mimosas. mmm.
unfortunately no breads, muffins, or bagels cause of passover.:bunny2:

dgramie 04-10-2009 08:29 AM

I will be having a big green salad!!

Misora 04-10-2009 04:30 PM

Ohh I want that cheesecake dip recipe! Sounds good!

We'll have ham, green beans, and god only knows what else. I'll be measuring whatever I have carefully though and eating small portions

Esmeralda 04-10-2009 07:26 PM

Well I've been informed that we're having spaghetti for dinner. So I plan on having a big bowl of lettuce, one serving of pasta, and maybe a roll.

As for dessert....... I'll still have to work on that one, cuz there's no way I'm eating that Sara Lee French Silk Pie they have in the freezer. lol

Su-Bee 04-10-2009 07:49 PM

Cheesecake Dip

1/2 package low-fat cream cheese (more if you like it more cheesecake-y tasting)
2 tablespoons sugar (I often use Splenda
a little low-fat milk
2 cups Cool Whip lite, thawed
1 teaspoon vanilla extract

In a mixing bowl, mix the cream cheese & sugar until well blended and smooth. Gently add in the frozen whipped topping and vanilla. Add a tiny bit of milk at a time until the dip is the texture you want. Serve chilled.

I often sprinkle it with mini chocolate chips or peanut butter chips before serving, but this is not necessary.

This is good with fruit, chunks of angel food cake, vanilla wafers, graham crackers, etc.

maggiesgirl 04-12-2009 12:55 AM

We are having:

-Low-Fat Schnieders Ham w/ pure honey
-steamed broc/cauliflower
-Scalloped potatoes made with diced red pepper, yukon gold potatoes, yams, light mozza and cheddar, milk, caramalized onion and cayenne pepper
-mini strawberry and rhubard pie for desert!:carrot::carrot::carrot::carrot:

janann 04-12-2009 01:38 AM

Ham
potatoes (not instant)
Applesauce
snap peas with peppers
homemade bread

canadianwoman 04-12-2009 09:04 AM

Since it will only be myself and my youngest son (18 years old), I am roasting a turkey breast. I will bake a sweet potato for me and 2 white potatoes for him. For the veggies I am making brussel sprouts for myself (I will bake them along with my sweet potato and he is having baby carrots.....also roasted.
To finish dinner off we will have a cup of tea and pop in a new dvd.

RedKat 04-12-2009 09:09 AM

We eat at two different homes and I am at the mercy of whatever they decide to prepare. So I made 3-bean salad minus the oil and am taking it to both places. That will be 90% of my meal. If I decide to splurge on anything else, I will just wait until my daughter is done and take a small bite of what I want, just for the taste. It has worked for me at other holidays...

Hyacinth 04-13-2009 01:48 PM

appetizer:
mixed raw veggies
pickle roll-ups

main:
ham
potato & green-bean salad
spinach & romaine salad (with hummus salad dressing, recipe found on 3FC :) )

dessert:
ambrosia
lemon bars
brownies
pastries from the Mexican bakery

beverages:

water
grape kool-aid (it was an impromptu dinner)

Redflame 04-13-2009 04:14 PM

Dinner: ham, potato salad, roasted sweet tater cubes (mostly for me) deviled eggs, and pickled beets.

Dessert, pie with SF pudding and lite cool whip and dark chocolate chunks in a choc graham shell......a sliver of this and a sliver of pecan pie

AND I am forgiving myself and moving on,.....knowing things could have gotten out of hand entirely!
