coconut any one?

  • I found this recipe online... I've been google searching and looking for some low cal recipes that have coconut in them.. I LOVE coconut! and I miss it! so I figured I'd try and find a way to make a sweet treat with coconut in it.. according to this recipe it is only 35 cals per cookie... that doesn't seem right to me.. according to the ingredients it seems like it should be more cals then just 35what do you think?

    and / or does any one else have a love for coconut and have any semi healthy recipes?

    dannon light and fit makes a coconut pineapple yogurt it's so yummy and only 80 cals but it's a limited time flavor only and dreyers makes a natural all fruit bar thats coconut and only 120 cals and it is sooooooo delicious... but I can only let myself have one of those every now and then or I could eat the whole box easily.


    heres the recipe i found

    LOW CALORIE COCONUT COOKIES

    1/2 c. butter
    1 tbsp. Sucaryl
    1/3 c. sugar
    1 egg
    1 tbsp. water
    1 tbsp. orange juice
    1 tbsp. grated orange rind
    1 tsp. almond extract
    1/2 c. shredded coconut
    2 c. no-sift flour
    1 tsp. baking powder
    1/2 tsp. salt

    Cream together butter, Sucaryl, egg, water, orange juice, peel, extract. Add in remaining ingredients and mix thoroughly. Form into roll and refrigerate until firm. Cut into thin slices and bake on Teflon cookie tin 10-15 minutes at 400 degrees. Makes 4 1/2 dozen cookies at 35 calories per cookie.
  • Yes, I love coconut too! I get the nonfat lite yogurt too -- pina colada or coconut cream pie flavors -- to help get that fix. Another way is to buy coconut extract and use it in beverages or smoothies. I put a couple of drops in coffee, or diet vanilla coke, it's really good. I've also found lower fat /unsweetened shredded coconut flakes that are pretty good -- I think I found it at Whole Foods. You could try stirring that into yogurt or sugar free pudding, or oatmeal along with a little of the coconut extract. Most of the shredded coconut available in the regular grocery store is sweetened with sugar which pumps up the calorie count, so you have to watch for that.

    Your cookie recipe looks good, but I'll bet the cookie size is pretty small to get that calorie count.

  • I dunno about that recipe... 4 1/2 dozen cookies, lol... 1 cookie leads to another... 35 calories will be 1000 calories in no time.


    I use the coconut extract too.. I've been trying it out in the fat free ricotta. I'm going to try getting the unsweetened coconut flakes to put on top (this might be a good sub for the Dreyer's coconut bars)... more protein and less sugar also.

    DaVinci syrups has a coconut flavored one that I want to try. No stores around here carry this flavor though and shipping online is alot so I'm holding off trying it...maybe someone here has tried it and can say if it's good or not? They even have a Malibu Rum flavor..can you believe that?? Anyone try any of these?
