Sweet potatoe heaven!
I normally eat my sweet potatoe nuked in the microwave, then sprinkled with black pepper.
Today however, I wanted more protein for lunch, so I smeared some peanut butter on top of my sweet potatoe. Oh my goodness, I'm in love! So warm & yummy & uber filling too. Sounds kinda weird, but it's an AMAZING combination that I just wanted to share. |

I bought sweet potatoes today (I LOVE LOVE LOVE them) and will try it with peanut butter (which I LOVE LOVE LOVE as well)for sure! Thanks for the tip...
I usually bake and eat with a bit of cottage cheese or butter but I also love to cut them up and mix with some oilve oil and garlic salt then bake (I like them crunchy so I bake them for a while). |
Must be something in the air today! I made a Sweet Potato Pancake and put Natural Peanut Butter on 1/3 of it. Put a tiny bit of Maple Syrup, Plain Kefir and Pecans on 1/3. I am thinking I will have the other 1/3 for supper and I am going to put a bit of Maple Syrup on it with a splash of Balsamic Vinegar. I know, I know, it sounds weird...but so does Cottage Cheese and I would try it if I had some!

stupid sweet potato query,
Do you always need to peel them? If you nuke em, do you nuke em skins on and then scoop out the flesh? Or peel first? Usually I'm not a cooking idiot but I rarely have prepared sweet potatoes :o |
Natalia, I just scrub the sweet potatoe, poke it with a fork many times to vent and nuke it skin & all for about 5-6 minutes. Then I put on the peanut butter and it becomes a warm ooey melted yum! Oh yeah the sweet potatoe skin is edible too, good and fiberlicous too! If the skin looks kinda rough/wierd though, sometimes I just eat the innards!

You don't have to peel off the skin. In fact, the skin has a lot of nutrients. Lately, I've been making sweet potato fries. I cut up the sp into fries like pieces and place them on a cooking spray coated baking pan. I then put cinnamon and sometimes little honey on the fries and spray a little cooking spray on top of them and pop them into the oven. I put the oven on 450 degrees and leave the fries in 20 mins. They're so tender and good when they come out.

if you like that mixture, you should google for african peanut stew, sometimes called west african peanut stew. Its basically a peanut butter/sweet potato soup.

Gosh PB & Sweet Potato sounds divine. I have around 300 calories left for the day...and NO sweet potatoes...:( I do have a butternut squash, I wonder what PB and BN squash would taste like? Hummm

Leeesa-- Sweet potatoes--pinkish/orangeish outside, orangeish inside, more tubular in shape than baking potatoes, sweet taste. (ISTM that in most of the US, what's sold as yams actually are sweet potatoes.)

I had one yesterday and I loved it. In the Biggest Loser family cookbook they have one with the Laughing Cow cheese. I have not tried it but it sounds good as well and a little savory.
Sweet potatoes are now on my lunch menu, and they are so cheap. |
Oh!!! Drat!!! I already had lunch but this sounds yummy! I love both sweet potatoes and PB. Tomorrow fer sure.

I've been eating one or two sweet potatoes nightly for the past two weeks (they were on sale at WallyWorld for $.50/lb and I went crazy!). I usually wash one, stab it a couple of times (great stress relief after a long day:p), nuke it with the skin on, add a little low cal butter and brown sugar.......:drool: HEAVEN!!!

Thanks for the link Evil. I guess my frustration was at what "1 large" really amounted to. According to your calorie counter, (as well as the one I use) they say 1 large is 180 grams. I picked out the 2 smallest they had at the store, (most were WAY larger). I brought them home and weighed them on my super duper digital scale I got for Christmas, (a high end very accurate scale). The "smaller" sweet potato weighed 506 grams. Almost 3 times what the calorie counter says is a Large. :) following me here? I guess my point is, one large is very deceiving! A large one at the store weighed upward to 30oz which would be almost 800 grams which would be well over 700 calories.
A large (180 grams) of sweet potato is about the size of a baseball....which I was really hoping for the size of a softball...or better yet a football...lol :) |
I hear ya loud and clear now, hmmmm the soil in which they grow these babies, they must fertilize the heck outta em to grow foods so ginormous in size along with everything else they think everybody wants EVERYTHING SUPERSIZED!!!! :dizzy::dizzy::dizzy::dizzy:
