This might sound strange, but I cook my scrambled eggs three days at a time.
I'll get 9 eggs w/ 3 yokes total. I'll cook my baby spinach, mushrooms, onions, lean canadian bacon and spices all together and then throw in the eggs. It actually stores nicely. In the morning I'll get my portion out, throw a little reduced fat cheese on it and it's so good! You may have to drain a little water from it, but it still tastes good and saves so much time. I usually eat mine in the car on my way to work. :) |
I love Quiche Muffins or you can make the Quiche of your choice Slice it and put a slice in half a pita
or grab 2 cheese sticks and some grape tomatoes Portable and yummy! |
I forgot to mention, a friend of mine actually hates getting things done in the morning so she makes weekly batches of breakfasts and freezes them. Some of her go to breakfast items are low calorie high fiber muffins, and she makes 200 calorie breakfast burritos with eggs, veggies, hot sauce, low calorie cheese, wheat tortillas, salsa, etc.

The mini quiches are so easy, it took me maybe 10 minutes to put it all together cooked for 35 minutes and they came out great. I put them in the refrigerator and take them out each morning, wrap in a whole wheat tortilla and off I go. Im going to try some more of these ideas. Thanks all.

I either have Cream of Wheat cooked, then I add a tablespoon of lite butter and a tablespoon of Grape Nuts. I also add a touch of S & P to taste. YUMMM :chef:

I have a magic bullet blender and I make a smoothie with plain fat free yogurt, frozen berry mix and a bit of milk. I microwave the berries for 40 seconds and pop everything in the magic bullet. It takes about 30 sec to blend. If I have time I drink it at home, or for rushed days I pour it into my travel mug and drink it on the way to work.

I do a lot of the things poster have already suggested, even though I work from my home office 90 percent of the time these days, but I still need non-thinking quick breakfast, lunch and dinner ideas for workdays, or for travel days and one thing I like to do is cook large amounts of travelable food and freeze everything in single portions that I can microwave or thaw. I LOVED the idea someone posted about making scrambled eggs for three days at a shot, very good idea. I also make baked items like eggbeater and brown rice quiches, etc., that I just throw in a large disposable baking dish, bake, cut into squares.
For smoothies, in addition to the ideas listed here, I also like cottage cheese as the protein base with fruit as it tastes like cheesecake. |

I also like green tea smoothies but you have to make the tea the night before....it's like chilled green tea (sometimes I put the blender jar in the fridge the night before) frozen blueberries, vanilla yogurt, protein powder. You just have to remember to at least fill the blender jar up with water before you leave if you can't clean it so it doesn't go cement on you during the day! |
To add to the oatmeal band wagon ...The ThinkFruit dried shakeable fruit is 35 calories per TBSP and is really yummy added to plain ol oatmeal. Gives it a little sweetness.

Hi, I have a couple of ideas that I hope will help.
#1 Whole wheat toast with 1/4 cup of 2% cottage cheese on top with ground pepper. about 180 cal #2 my avacado breakfast burrito- 1 med tortilla, 1/4 avacado, 1 tbsp of red onion, 3 grape tomatos, 1 egg , 3 pcs Oscar meyer center cut bacon. fry the bacon, and drain, I fry the egg in pam, and break the yoke. mash up the avacado and put the onion, and tomato in with a dash of salt. Put the bacon, egg, and avacado mix in the tortilla and you have 319 calories of heaven. To make it fast, you could fry up the bacon, and mash the avacado the night before, and fry the egg while you are in the shower, and poof yummy and healthy! |
My breakfast takes some time to prepare, but I have to eat a hearty breakfast - or else I might overeat or metabolism will go down.
2 hard boiled eggs (no yolk) 1/2 cup berries 1 oz lean ham 1 laughing cow low fat cheese =135 calories I get a nice full serving of fruit, lean protein and dairy. If I don't have lean ham, I substitute a slice of grilled tofu. |
