I would say add in more snacks through the day. maybe an apple, a banana, string cheese, and then have a treat snack, Like dark chocolate or ice cream or something. I do this every day.

Sneaky Veggies
 
Jessica Seinfield has a cookbook called Deceptively Delicious with recipes that "sneak" vegetables into meals. This could help with your veggie phobia and still allow you to gain the benefits of vegetables in your diet.

You asked how to increase your calories. First of all, like other posters said, I wouldn't recommend adding things up at the end of the day and then running around trying to find another 500 cals to eat. A little better planning during the day will help that. Figure it out roughly the night before.

Whether you like vegetables or not, you can eat more for your earlier meals. Add protein. Have an egg or two for breakfast sometimes. Get a Subway with double meat. Alternatively, you could have a mid-morning or mid-afternoon snack of a glass of 1% milk with protein powder. I agree about the nuts, but be sure to count them out to 1 oz. (I have problems stopping with nuts.) Or you have an ounce of cheese with a few Triscuits.

Vegetables are good filler foods. Do you like string beans? Not canned--those aren't something I like, either. Try the microwaveable bag. Be sure to follow the directions. When they come out, drain them. Put into a large bowl 2 tsp to 1 TBSP olive oil, 1/2 tsp salt, and 1 tsp dill weed. Add the string beans and toss well. This can be eaten warm or cold. Even with the oil, a serving does not have many calories.
