Photochick- No kidding about it being a doozy! I was just trying to tough it out until yesterday afternoon when my husband touched me and when he realized how hot I was he insisted I take my temperature and it was a whopping 101 degrees and then I realized I was really really sick and not just feeling blah and being a baby about it. So we found a "after hours" health clinic for me to go to since it was a Sunday since silly me was hoping that I still would be able to go to work today.

Those popsicles sound yummy I will have to look for them next time I go to the grocery store.

Today: Whole wheat mac and cheese (low fat mixed with regular cheese) with onions and tomatoes, Baked beans, green beans, mixed green salad
Tuesday: Whole wheat spaghetti/sauce/veggie meatballs, Caesar salad, green beans, whole wheat garlic bread
Wednesday: Lentil Roast, potatoes, broccoli, corn, mixed green salad
Thursday: Baked Beans, scalloped potatoes, corn, green beans, possibly a green salad
Friday: Veggie hot dogs on whole wheat buns, oven fries, coleslaw, left-over baked beans
Saturday: Enchiladas with cheese and veggie chicken, black beans with corn, avocado and tomatoes, green salad, Spanish rice
Sunday: Homemade vegetable bean soup, tomato sandwiches on whole wheat bread

I eat the same as the family and just watch my portions. If something is especially high in calories I make a small dish for myself with lighter ingredients.

wow you girls eat so good!! Great ideas..

Monday- baked chicken with brown rice with onions and red pepper with baby carrots

Tuesday- Turkey sloppy joes with corn

Wednesday- Turkey meatballs with spaghetti, green beans and bread ( wont be eating the bread)

Thursday- Chicken creole

Friday - pizza night and I plan on eating this..lol

Tonight is homemade soup - lean ground beef, tomato juice (or sauce), new potatoes, green beans, sweet peas, corn, and maybe black eyed peas and carrots.. mmm

Today We are making Turkey burgers cooked on the grill, condiments available include, sliced tomato, pickles, raw red onion, fried yellow onion, lettuce, ketchup, mustard, and light mayo. I will make sweet potato fries seasoned lightly for a side, and a small green salad with Newmans own light honey mustard dressing.

tomorrow? dunno yet, maybe home made chicken-pepper soup *** I have the pot going right now :)

Gosh you guys are so good at this! I think I lost my love for cooking when I started eating better. :( Use to cook lots of bad things.

Last night was yukon gold potatoes and turkey chili with 2% cheddar
Tonight... probably fish and rice
Tomorrow is supposed to rain so we'll do comfort food - grilled cheese and soup
Maybe braised chicken and butternut squash Thursday. Dunno. Might be going to some lame concert, so dinner might end up at Subway.

I need to get better at planning. Geez...

We are having breakfast for supper tonight. English muffin sandwiches, fresh pineapple, and roasted red potatoes (my take on hash browns).

Oh I love breakfast for supper nights. I haven't done that in a while, in fact, so I think I'll put it on next weeks menu.

My dad was always the breakfast cook in our house, so whenever mom needed a break, we'd do breakfast for supper and it was a huge treat. :)

Wow, what great planners you all are. And here I thought planning dinner during breakfast was amazing!

I'm going to make a concerted effort to plan a bunch of days ahead. I can see how it would be so much easier in the long run (and eliminate those last minute trips to the grocery store!).

I actually love my planning time on Sundays. I sit down with my laptop, my Excel spreadsheet, and whatever recipes I've bookmarked or torn out of a magazine in the past week ... and plan. I can throw out ideas for commentary to my husband (although I don't always take his suggestions), and I can just play around with what sounds good.

Then I can either go shopping that night or the next day after work to found out whatever I don't already have.
