Finding out calories for serving of soup.

I am going to make this WW zero points garden veggie soup.

I am not quite sure how to figure out what calories are in a cup of it.

2 medium garlic clove(s), minced
1 medium onion(s), diced
2 medium carrot(s), diced
1 medium sweet red pepper(s), diced
1 medium stalk celery, diced
2 small zucchini, diced
2 cup green cabbage, shredded
2 cup Swiss chard, chopped (I'll use spinach)
2 cup cauliflower, small florets
2 cup broccoli, small florets
2 tsp thyme, fresh, chopped
6 cup vegetable broth (I'll use fat free chicken broth)
2 Tbsp parsley, or chives, fresh, chopped
1/2 tsp table salt, or to taste
1/4 tsp black pepper, or to taste
2 Tbsp fresh lemon juice, optional

Instructions

Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer 10 minutes.
Stir in parsley or chives; season to taste with salt, pepper and lemon juice. Yields about 1 cup per serving.

If it is 0 WW points, then it is around 50 calories or less per serving (ballpark). I would just look up all the calories for the veggies and the broth, add them up and divide by the finished amount of soup. I tend to go by weight, so weigh your pot ahead of time, and then with the finished soup. Subtract the weight of the pot.

Bev, you're such a sweetpea with your supportive posts, so to show some love back I put it all into Daily Plate for you (easy because the foods wre all on my frequently eaten list)....

For the whole batch...
461 calories
0 gr fat
0 gr cholesterol
3751 gr sodium
83 gr carbohydrates
27 gr sugar
30 gr fiber
28 gr protein

How many servings is this crazy soup? Sounds like cozy fall low-cal eating!

I use this: http://recipes.sparkpeople.com

You have to register, but it's worth it. You create the recipe online by adding the ingredients and then you enter the number of servings the recipe makes. It'll break down the nutritional values for you.

Just eyeballing it (and because it's pretty similar to a cabbage/veggie soup I make all the time), I'd say it's around 85 cals per 2 cup serving.

That's a huge WAG, btw, but I'd bet it's fairly close. :D

Hahah. I was close. Figuring 6 servings per pot, that comes out to 77 cals per serving.

Thanks so much everyone!! The recipe says 12 servings. You've helped me very much. I will go by your measurements. It's all kind of approximate anyway - a medium onion can give or take an ounce, really. I just wanted a good way to figure it out.

I'd never thought of weighing the pot before and after making the soup!

I am going to make it later this week...I'll let you know how it tastes.

PS...Thanks, FB for thinking of me as a 'sweetpea' - I like that.:)

This soup is good. I've eaten as a side. Also, today I am adding some cooked beans, parm cheese, and a shake of oregano for a meal.

Thanks again.

This is one of my absolute favorite soups! So good and filling and great for the inbetween weather we are having in Dallas right now. I have a bunch of zero to 2 point WW soups- here is another good one that is 2 points/serving. Enjoy!

Tex Mex Soup

1 Can Ranch Style beans (20 oz.??? or use 2 of the small sized ones)

1 can whole kernel corn

1 can Ro-Tel diced tomatoes and green chiles (or whatever brand you use)

1 can diced tomatoes

1/2 lb. lean ground chuck

1 pkg. (1 oz.) ranch dressing mix

1 pkg. taco seasoning

1 can chicken broth

Brown the ground beef. Add the taco and ranch seasonings to the meat and mix well. In a large pot, just open the cans of vegies and broth...dump them in....add the seasoned ground beef, stir to mix and simmer until everything is heated through.

1 cup soup = 2 points

Thanks, Arlene. This soup looks great.

Can you post your other zero point soups, when you get a chance. Now that I know zero point soups are under 50 calories a cup - it's easy to fit them into my calorie counting.
