Fiber one cereal
 
What do you do with it? I made little snacks (from the website) with peanut butter and a little bit of chocolate chips mixed in with the fiber one cereal. Its 150 calories per "haystack" I tried to eat a bowl of the fiber one cereal and its a no-go lol I have 3 boxes thanks to the deal going on at CVS, so what can I do with it???

I've never had it, as I'm not a cereal or breakfast foods person. Is it that twig cereal? Would it be good sprinkled on a salad in place of croutons or mixed into yogurt?

Well I'm not much of a breakfast person either (see Never eat breakfast thread) lol I bought this yesterday and yes it looks like rabbit food. There is A LOT of fiber in it, obviously :)

Whir it in the food processor (or crush with a rolling pin in a plastic bag) - then, use it as you would bread crumbs in meatballs or meatloaf, or even use it to substititute some of the flour (not all - maybe up to 25%) in a quick bread recipe. Another thought is to coarsely crush it and layer it in a parfait with fruit, yogurt and a bit of light whipped cream.

You can also bake muffins with it. I did this a few days ago, only I made mine into banana nut muffins. I nixed the applesauce and raisins, and instead added 3/4 cup mashed VERY RIPE bananas, 1/2 cup chopped pecans, a splash of vanilla extract, and some cinnamon.

I actually found it kinda of good just on its own. I bought it because of the hungry girl cook book - this weekend I am going to try making the onion rings with it! I tried the pumpkin crunchers... i ate one or two, they just kinda... well not gross but not that great either, LOL

You said on your other thread that you don't have milk with it. Are you lactose intolerant? If not, and if you're not vegan, maybe try 1% milk?

I have mine with soy milk. Or I mix it with unsweetened applesauce. Or I put it in my low-fat pb&j sandwich.

Those onion rings are amazing. I'd eat them every day if I could.

Good Morning!
I've been eating Fiber One for years. Up until last month I always ate it dry like you would popcorn. I'm not fond of cereal, if you don't wolf cereal down quickly, it gets soggy :halfempty: My DH like the light soy milk on his cereal and purchased a "Chocolate Light Soy Milk" a month ago. I tried it on my Fiber One with 1/2 sliced banana and it was delicious, just like eating dessert. Speaking of dessert, I sprinkle 1/2 serving of Fiber One on top of my SF pudding/FF Cool Whip. I'm a huge vegetable eater and have a hard time using up my calories for the day, sometimes at night I'll eat another bowl of cereal with the chocolate soy milk, yummy . I just checked my average fiber for the last 12 days, it's 42.25 grams per day. Thanks to Fiber One! It makes weight lost so much easier and keeps you full.

A little off topic, but has anyone tried the FiberOne bars? I eat a lot of different kinds of cereal/breakfast/granola bars, but find those to be absolutely fantastic! Some of the bars are just to curb my appetite or get calories in or have a snack, but with those, I really taste them and just find them to be a very tasty and filling treat for such low calories!

Just like LindseyLouWho, I make Meg's Fiber One Muffins with it, but with the following changes to the recipe:
  • skim milk instead of buttermilk (I never have any use of the leftover buttermilk)
  • 1 1/2 tsp baking powder instead of the baking soda (baking soda won't work with skim milk)
  • pumpkin puree instead of applesauce
  • 1 to 2 tsp pumpkin pie spice
  • about 100 calories worth of fruit (berries, diced apple, diced apricot, cherries, diced peaches, diced mango, whatever is fresh) instead of the raisins

I divide the batter into 10 muffins, instead of 12 (I like my muffins a little larger). With my changes, the muffins come in at about 80 calories each.

If you like your muffins fluffier and lighter in texture, sub all purpose flour for half of the whole wheat flour.

I also eat Fiber One cereal by itself as a snack.

Nadia...........On the calorie counting thread we all discussed the Fiber One bar and all agree it's delicious but it also gave just about everyone terrible gas! :o
You might be one of the few people that isn't affect by them. One gal pointed out one of the ingredients, "shellac" and something about bug parts or shells or something, I can't remember now. I have two open boxes in my pantry opened, I thought I'd pawn them off on DH but he got terrible gas too!

I always mix fiber one with yogurt and some chopped fruit to make a really filling parfait! It is also good if you crush it and mix it with some lite vanilla ice cream for desert. It is almost like a malt.
It is also good crushed and mixed with fruit smoothies.
If you can stand the taste just a little, try mixing it with a good tasting cereal like honey bunches of oats.

Even adding 1/8 of a cup to the ice cream and the smoothies and 1/4 cup to the cereal and the yogurt makes it much more filling!

I use it to cut regular cereal. You can add just a 1/4 cup and get a good fiber boost.

I mix 1/4 cup fiber one with 1/4 cup granola and later with strawberries or blueberries and vanilla yogurt for a breakfast parfait.

My favorite recipe is to take low fat vanilla ice cream. Add 1/4 cup fiber one, a dash of cinnamon and top with a little dark agave nectar.

I make the Fiber OneŽ Crunchy Fudge Cookies on their website but sub No Pudge Brownie mix.

Sometimes I put it in stir fry as a sub for those little crispy noodles.
