Coconut Cream Pie Shake

  • Hi all,
    I normally do low carb but I thought I would post this recipe in the cal counters b/c it was such a GOOOOODDD low cal shake. I used Hood Calorie Countdown milk in place of the skim milk. They have the same calories but a lot lower in carbs. About 6 carbs per glass with the Hood.

    Serves 4 for about 130 calories each
    Ingredients for this yummy Diet Shake:

    4 cups of ice cold skimmed milk
    1 small box of sugarfree/fatfree instant vanilla pudding
    1 teaspoon of REAL vanilla extract
    1 ounce of grated coconut
    2-4 ice cubes
    1-3 packets of Splenda or Equal if extra sweetness is desired

    Blend all ingredients until thick and frothy.
    Pour into chilled glasses and serve immediately. Top with 2 tablespoons of whipped topping if desired.

  • Another low carb/milk shake option is:

    1 C skim Milk
    1 small box sugar free chocolate pudding
    1 ripe banana (you can substitute this w/ splenda for lower carb - but the banana makes it sweet)
    1/3 C Fat Free Ricotta Cheese
    Ice

    Blend - VERY Thick and Chocolatey!!!

    Where do you find Fat free ricotta? I haven't seen it at my local stores. I really like ricotta for desert recipes but the best I've able to find is low fat, which is still pretty high in calories.

    Wonder if I could divide this in 4 and make one serving at a time. Think a low-cal jello pudding cup would work instead of a whole box? Hmmmm
  • I actually cut into 2 servings. I drink 1 cup at breakfast and refrigerate the other and drink it at night. I just cut everything in half
