I love eggs and I tend to eat them for breakfast everyday. 2 eggs scrambled. but my cholesterol on mydailyplate says I am over. scrambled egg whites just doesn't sound appealing or filling to me. Is it bad to eat 2 eggs a day??? also I am having trouble reaching my calories for the day...i know that sounds silly but I have a 1400 plan....and i can't seem to get up there. I have 2 eggs scrambled for breakfast, tuna or salmon and veggies for lunch, applesauce and cinnamon for snack, a chicken or turkey and veggies for dinner....but thats only like 1000 calories!!! the problem is I am full after. yesterday I threw in peanutbutter on celery and was still 300 under!! what should I eat?
If you are struggling to get in your calories without being full, I'd suggesting adding small portions of foods with healthy fats...nuts, avocadoes, etc...and cooking your food in olive oil. You also could add some protein in with your snacks (like, for example, a string cheese along with your apple sauce). All of these would add lots of nutrition and good fat while keeping your calories at a more reasonable level.
As for the cholesterol...if you are concerned about it, you could switch to EggBeaters or a similar cholesterol-free egg substitute...tastes more like a whole egg than an egg white, but has the cholesterol removed. Or ask your doctor if it is something you need to worry about. If you don't have problems with cholesterol, it might be OK for you to eat a little more of it (much like, for people without blood pressure issues, going slightly over on sodium isn't as bad as it would be for people WITH blood pressure issues).
I use walnuts to get in calories when needed. Plus walnuts are an excellent source of essential fats.
30 grams of walnuts is about 200 calories.. it's a bit more than an handful.
I don't think 2 eggs is bad. But if you want to reduce the amount of chol you're getting but keep the same # of calories, you could mix together 1 whole egg and 3/4 cup of eggwhites (ew: 1/4 cup = 30 cals. an egg is about 80). It'll end up being more, volume-wise.
I was going to suggest the same thing.... mix one egg with egg whites.
I will often make an omelet with 1 egg and 2 whites because I don't like JUST whites.
1 whole egg + 1/2 cup 100% egg whites is my standard breakfast. When you add veggies or beans you don't miss the second white at all. Even just the eggs and whites scrambled together without any veggies is pretty good. I eat it all the time.
