Help for my Baked Potato
We usually have baked potatoes a couple of times a week and I used to loaded 'em up with butter and sour cream. (kind of helps explain my hips :^:)I was good this weekend and opted for a little salsa on it instead. Hmm. There must be something better. Also, I am definately not a fan of fat free dressings. Any suggestions?

But seriously, I have limited myself to potatoes once a week. We will have mashed potatoes generally on sundays and I have 1 cup, that's it. Once in a while I make the recipe on the lipton package for lipton onion potatoes, I make it with olive oil instead. Can't remember how many cals that is though and it is only an occasional treat plus lots of sodium. *sigh* |
How about 1 tablespoon of your regular dressing, or of a "lite", but not ff, dressing? Or you can try a sprinkle of Molly McButter, and a tablespoon of sour cream for about 30 calories. Daisy brand regular sour cream is 2 T for 60 calories. It's all about portion control, right? Hope you find something that works!

Well...this is more of a main dish or a lunch than a side dish, but I've been DYING to share this one....
I make my baked potatoes with 1/2 cup FF refried beans, 1 oz(less?) Velveeta Light, and salsa....I think it was called a potato bomb, and it totally fills you up. I had that with a cuppa soup for lunch and feel full for a LONG time. |
I like chili cheese baked potatoes. Low fat chili and small amount of cheese.
Also I use the I cant believe its not butter sprays on mine. I think its something crazy like 10 calories for 12.5 sprays. Apparently when listed a food product does not have to say it has any calories if its actual calorie count has less than 5 actual calories. That's why you see some funky portion sizes for lots of 0 cal foods :p |
For baked potatoes, I like to steam cauliflower, broccoli, zucchini and baby carrots, put it in the baked potato and then cover with a low fat marinara.
I usually opt for sweet potatoes - better for you and taste so good plain! I just bake them 1 hour+ so they are really really really soft and mash them with my fork. |
First I like to use the Yukon Gold Potatoes because they have a slight butter tast and are very creamy when baked. I liked to mash them up and sprinkle hot sauce on them (just enough to give them a kick) and then spread about 1 T of Lite Sour Cream on top. Oh heaven!

A laughing cow garlic and herb cheese wedge is only 35 calories and delicious when mashed up with a baked potato!

I second the laughing cow cheese wedges. Other things I sometimes put on mine: fat free plain greek yogurt (tastes like sour cream but much richer and creamier), chives, a sprinkle of bacon bits, fat free feta, ketchup, hot sauce, sprinkle butter flavoring (I don't know what it's actually called but it's made to sprinkle on your popcorn and you can find it in the microwave popcorn section of the grocery store, only has around 5 calories per tablespoon).

I just do low-fat sour cream with chives and parsley stirred in, and a bunch of Brummel and Brown yogurt margarine. Yum!

I say the lite or fat free tillamook sour cream are the best, get the light if you don't like the idea of the fat free. They really do make the sour cream good even if you don't normally like "fat free" versions (like me). Then I carefully measure everything out, my sour cream and sharp (more flavor) cheese and then salt and pepper.

Mmmmm... I love baked potatoes and eat them twice a week, minimum. I top them with Laughing Cow French Onion cheese wedges (30 cals/wedge), fat free sour cream, and lots of broccoli and cauliflower.

I think I must be boring but I had a grilled baked potato the other day and it was pretty good. I wrapped potatoes in foil and put them directly on the coals while grilling, flipping them a couple times during the process. I thought it didn't need anything on it and tasted good like it was.

Yum! You're right Nelie, if you cook them in coals, all they need is margarine and salt and pepper. I like the margarine on them to moisten them up.
Potatoes are sooooooo good. I should eat them more. |

Baked Potato
I cooked one single slice of bacon with onions and green peppers. After the potato is baked, cut it open, break it up, and add a teaspoon or two of water to it before mashing it. The water adds moisture (which is what butter and sour cream do). Then top it with the bacon, onion, and green peppers.
If you don't want to use the bacon even just adding sautéed peppers and onions makes it good. Of course, I think onions makes anything better. |

I have to second what LLV said about adding cottage cheese and butter spray. It tastes surprisingly good to me. I put that plus some fresh ground pepper and salt and I'm good to go.

I always de-skin them and kinda mash it up a little and I'll put ham, cheese and lite dressing on it. Sometimes I'll baked a chicken breast and use that instead of diced ham!! Sometimes I'll even add a little tomato! I love baked potatoes, they have saved me many a day from eating something I don't need to! |
Have you ever tried squeezing fresh lemon on them with some pepper. I know it sounds odd but it is very good if you like lemons. I like potatoes enough that I usually eat them plan.
For smashed/mashed potatoes I like to use low sodium chicken stock with chives. A way to flavor the skin is to wet the potato and sprinkle Mrs. Dash on them before your wrap them up. Could even use lemon juice to help the Mrs. Dash to stick. |
