Favorite Low Calorie Recipes
 
I thought it's be fun for everyone to share their favorite low calorie recipes. You know, the one's you make over and over again because they are so yummy.

This is one of my favorites! The ingredients may not be easy for everyone to find, but if you like Korean food (or spicy food) it's well worth the trouble. Plus, it's super low calorie!

Spicy Kim Chi Soup Serves 4 (or 2 hungry people)

1t oil
1 clove garlic, minced
1" piece of fresh ginger, peeled and minced
4 green onions
1T low sodium soy sauce
1/2 block of extra-firm tofu cubed (the kind made with nigari is best)
4 cups of low sodium vegetable stock
1 cup kim chi (honestly the older and more pungent the better!)
1T Korean Chili powder (or less if you don't like it quite so spicy)
1 carrot, chopped
2 oz fresh mushrooms, sliced (dried Chinese mushrooms are good too)
a few drops of Sesame oil (optional and not included in calorie counts)

In a large pot sautee garlic, onions, and ginger in oil until soft (approx. 2 minutes.) Add soy sauce and stir for 30 seconds. Add the tofu, stir, and allow to cook for 2 minutes. Add the remaining ingredients. Bring to a simmer and allow to simmer, covered, for 10 minutes. If using the sesame oil drizzle on soup once in bowls.

Per Serving:
117 calories
5 grams of fat
12 grams of carbohydrate
3 grams of fiber
8 grams of protein

I vary the vegetables depending on what I have in the fridge (bean sprouts, daikon radish, celery, & broccoli are all good.) I fill out the meal with brown rice, a salad, and sometimes a few potstickers.

The Korean chili powder can be found in most Asian markets. It looks like red instant coffee. The flakes are somewhat granular. If you can't find it, just omit it and use a spicier kim chi.

i have a favorite dessert for these hot summer months.

ff Jello
ff/light cool whip
graham crust (optional)

Make jello according to package directions minus one cup of water. Let it cool slightly. Mix and whip in cool whip. Pour into light graham pie crust or just pour into individual serving cups.

I dont know the calorie count but it is next to nothing. And really makes a great dessert when i want something sweet but the calories are tight for the day.

heres another cold dessert

Low fat Panna Cotta

2 cups Skim milk
2 tbls plain geletin
1 tbls honey or splenda
berries

Follow geletin directions and mix with milk. Use hot milk to dissolve the geletin. Let is cool slightly. Add berries, we usually use blueberries. Pour into individual serving cups. The result is a delicious custard with lots of fruit. (psst, kids LOVE it). Again, i dont know the cals off the top of my head but it is just the cals of the milk you use, plus the fruit you choose, which ever sweetener.

I just made a great salmon wrap for my lunch. It was delicious!

I made a little guacamole with 20g avocado, a tsp of fat free sour cream, a spritz of lemon juice, a little cilantro and salt and pepper. Grilled 3oz of salmon and then put the salmon and guacamole on a whole wheat wrap with some diced tomato and red onion.

Yummy! And it came in at 304, so I was able to have a side salad to go along with it.

My favorite portable breakfast is Egg Muffins.

you need one box of egg whites, 2 whole eggs,3 table spoons low fat milk, 1/2 cup low fat shreeded chedder cheese, 4 ounces ham, salt and pepper to taste. recipe also says you can chop up some cherry tomatoes and use some frozen spinach. but i don't.

chop up the ham into small squares and mix all ingredients in a bowl. spray a muffin pan with some no calories butter spray. pour into muffin pans 3/4 full. cook for 30 minutes at 350.

Each muffin is 54 calories, 2 grams fat, 1 gram carb and 7 grams protein.

I love this recipe because it is high protein and low everything else, I can make a pan of these on sunday night and each day, i just bag up 2 of them and microwave them when i get to work. I never have to worry about what's for breakfast.

how's the texture on teh egg muffins? Do they "feel" like microwaved eggs or is it truly more muffinier? lol
and how do they look?

I modified a recipe found on calorieking:
This makes 1 cup/ roughly 240 cals ( I do not include mustard, veges in cal count)

This had a nice summer time taste

Chicken Salad w/ cherries wrap

1/4 cup non fat plain yogurt
2 TBSP lemon juice
1/8 tsp. worcestershire sauce
4 pecan halves (minced)
1 tsp dijon mustard
1/8 cup dried cherries
1 Tbsp minced green onion
1/4-1/3 cup cucumber, diced
1 small carrot- grated
1/2 cup chicken breast, boiled & diced

Mix all ingredients together. Serve in lettuce wrap.

* original recipe called for curry powder & tortillas. Next time I'll omit worcestershire sauce

Wow...that's a tuff question to answer. No...they are not like bready muffin texture. They kinda feel like microwaved eggs I suppose since i do reheat them in the microwave. But i really do think they are good. I really enjoy eating these for breakfast. When I make another batch next week, i'll take a picture of them.
