Southwestern Breakfast Scramble (Serves 1)
INGREDIENTS 1 tsp. olive oil 1 egg 2 egg whites 2 tsp. skim milk (eyeball it) 1/3 c. Morningstar Farms frozen Vegetarian Burger Crumbles (or other brand) 1/3 c. canned black beans, rinsed (buy low-sodium anyways!) 2 tsp. Old El Paso brand 40% less sodium Taco Seasoning (or other brand) 2 tbsp. 2% shredded Cheddar or Mexican Blend cheese DIRECTIONS 1. Add olive oil to skillet over med-low heat. Beat egg, egg whites, and milk together in a small cup or bowl until thoroughly mixed; add to skillet. 2. Cook eggs, scrambling, until slightly set and fluffy. Add frozen crumbles, and cook, stirring occasionally, for 3-5 minutes (until crumbles are warmed). 3. Add beans and seasoning, mixing thoroughly. Cook for another 2-3 minutes, until entire mixture is warmed and softened. 4. Remove mixture from skillet to a bowl, top with the cheese. Enjoy! I have this with coffee 4-5 days per week. I used to have it with hash browns added, but no mas! :p |

I wonder if you could make a quiche out of it? Make kindof a Mock crust between the beans and the crumbles?
