235 Calorie Tofu Spinach Omelette

  • I thought this up this morning, tried it, and it's great. It doesn't have that icky egg taste I was so sick of. It's light and doesn't taste like tofu. Just try it, ladies, trust me !

    -1/4 C firm silken tofu (@3oz)
    -1 large egg
    -1 C spinach
    -1oz Monterrey Jack
    -salt, pepper, tumeric, garlic powder--sprinkles of each to taste

    Mix egg and tofu well (I used an electric mixer) then add spices. Place spinach in a pan greased with cooking spray for about 1 min just until slightly wilted. Respray pan. Pour egg tofu mixture in pan and spread around. Cook on med-high heat until set. If you like a firmer omlette, put under broiler for a minute with door open. Add spinach and cheese to one side, flip other side to close omelette. Cook for about 30 seconds. Enjoy!! (I topped mine with hotsauce for extra zip)
