Baked Eggs with Ham and Tomato
 
Ingredients

1 garlic clove , chopped
olive oil
400g tin chopped tomatoes
few leaves basil , shredded
4 slices cooked ham , roughly torn
2 eggs


Heat the oven to 180C/fan 160C/gas 4. Heat a little oil in a pan, sizzle the garlic for a few seconds then add the tomatoes and simmer for 10 minutes until thickened.

Stir in the basil. Divide the sauce and ham between 2 individual baking dishes. Crack an egg on top and season.

Bake for 12-14 minutes until just set. Serve with crusty bread.

208 kcalories, protein 18.4g, carbohydrate 5.9g, fat 12.4 g, saturated fat 2.9g, fibre 2.1g, salt 1.99 g

This recipe serves 2. I halved it and it was plenty for me. I served it with grilled mushrooms and asparagus on the side.

Amber, in north America we use liquid measure rather than weight. Canned tomatoes would be about 12 fluid ounces in the USA or or 350 ml in Canada.

Sounds delicious! For even more metric to imperial conversions ... 180ºC=350ºF. 160ºC=~325ºF... but what does the /gas 4 mean?

UK ovens are marked 1 - 9 with gas marks! Sorry! I should have edited the bbc's recipe!
