Default Quick Quiche (phase 1)

I found a variation of the veggie cups. You had to blend spinach, broccoli,
eggs,etc. in blender and bake. It was literally St Patrick's Day green and hard to get down. I experimented with my own version, and it turned out really good!

Quick Quiche

8 eggs (I used half egg beaters and half real eggs)
1 cup fat free half and half
2 cups frozen broccoli, cooked till almost done, chopped
2 cups low fat shredded cheese
salt & Pepper
1/2 cup chopped onion
garlic (I add it to everything cuz I love it)
5 - 6 slices canadian bacon

Spray 8x8 pan with Pam. Spread prepared broccoli in pan. Cover with canadian bacon (cut up so it is one even layer). Mix together the remaining ingredients. Pour over the top of the bacon. Bake at 350 for 40-45 min or until done (my oven took about 10 min longer)

I cut it in 9 squares, and it's my breakfast all week! It's really good heated up!

I made this earlier this week - great recipe. It's revolting cold but really yummy after 2 minutes in the microwave!!

I've been having it for breakfast and lunch this week as it's really nice. Thanks!

I made a variation on this with fat free pepporoni instead of bacon and tomatoes and mushrooms instead of brocolli. It's divine!

Thanks for this recipe...it is now one of my breakfast faves and has so many variations. I usually use frozen spinach instead of broccoli, 1 cup of 2% mild cheddar cheese, add 1/2 cup of red pepper, and cut up the canadian bacon, and mix everything together instead of layering in the bottom. With these modifications, I came up with 131 calories and 5.6 g fat per square (if you cut up into 9 squares) which is great, and it is such an easy breakfast during the week if you make it over the weekend. My husband loves the quiche too!

This also looks good. Trying to come up with a few breakfast ideas to last the work week which is always so busy in the morning. Now I can eat on the run...or while sitting in traffic!

Made it last night in a round 9.5" pan...so yummy! Should keep me going for the rest of the week and then some.
