Rolled omlette
Preheat oven to 350. Take a 10 x 15 baking sheet and give it a quick spray with cooking spray. Line the bottom with a piece of parchment and spray the parchment too.
1 cup milk
8 eggs
1 tablespoon dijon mustard
1/2 bag frozen spinach (or one box)
chopped turkey, ham, bacon or any other lunch style meat
1 cup shredded low fat cheese
salt and pepper to taste
Cook the spinach, drain and squeeze out all extra water. Wisk the eggs, milk and dijon mustard together. Add the spinach and mix well. Pour into the pan and sprinkle the chopped meat and cheese on top evenly.
Bake at 350 for about 10-15 minutes or until set. Take out of the oven and let cool for 5 minutes, then lifting the parchment, roll the omelette tightly so it looks like a jelly roll. Slice into 6 even pieces and refrigerate. Heat in microwave for 2 minutes to reheat.
I like this because it doesn't dry out like the muffins. You could add other veggies too, like peppers/chopped tomatoes or even onions.
