Baked Eggs with Ham and Tomato

  • Ingredients

    1 garlic clove , chopped
    olive oil
    400g tin chopped tomatoes
    few leaves basil , shredded
    4 slices cooked ham , roughly torn
    2 eggs


    Heat the oven to 180C/fan 160C/gas 4. Heat a little oil in a pan, sizzle the garlic for a few seconds then add the tomatoes and simmer for 10 minutes until thickened.

    Stir in the basil. Divide the sauce and ham between 2 individual baking dishes. Crack an egg on top and season.

    Bake for 12-14 minutes until just set. Serve with crusty bread.

    This recipe serves 2. I halved it and it was plenty for me. I served it with grilled mushrooms and asparagus on the side.

  • Amber, in north America we use liquid measure rather than weight. Canned tomatoes would be about 12 fluid ounces in the USA or or 350 ml in Canada.
  • Sounds delicious! For even more metric to imperial conversions ... 180ºC=350ºF. 160ºC=~325ºF... but what does the /gas 4 mean?
  • UK ovens are marked 1 - 9 with gas marks! Sorry! I should have edited the bbc's recipe!
