Breakfast Scramble Pizza Pie
 
PER SERVING (entire recipe): 240 calories, 8g fat, 929mg sodium, 26.5g carbs, 13.5g fiber, 5.5g sugars, 26g protein -- POINTSŪ value 5*



Ingredients:
1 slice center-cut bacon or turkey bacon
1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 La Tortilla Factory Smart & Delicious Low Carb High Fiber Large Tortilla
1 stick light string cheese
1/4 cup canned crushed tomatoes
Dash Italian seasoning, or more to taste
2 tbsp. finely chopped onion
2 tbsp. finely chopped red bell pepper
Optional: reduced-fat Parmesan-style grated topping

Directions:
Preheat oven to 350 degrees.

Prepare bacon according to package directions, either in the microwave or in a skillet sprayed with nonstick spray. Chop or crumble and set aside.

Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add egg substitute and scramble until fully cooked. Remove from heat and set aside.

Place tortilla on a baking sheet sprayed with nonstick spray. Bake in the oven for 5 - 6 minutes per side. Once slightly crispy, remove from oven, but do not turn oven off.

Meanwhile, break string cheese into thirds and place in a food processor or blender -- blend at high speed until cheese takes on a shredded or grated consistency. (Or just tear string cheese into pieces and roughly chop.) Set aside.

Spread crushed tomatoes over the tortilla, leaving a 1/2-inch border around the edge. Sprinkle with a dash or more of Italian seasoning. Evenly distribute scrambled eggs over the tomatoes. Top evenly with shredded/grated string cheese, onion, pepper, and bacon.

Bake in the oven for 8 - 10 minutes, until pizza is hot and cheese has melted. If you like, top with some Parm-style grated topping. Slice it into quarters and eat up!!!
