Low calorie, low fat egg breakfast muffins
I've been meaning to post this for a while. It's a pretty decent recipe, I think.
I found a different recipe online that I based mine off of. I didn't have a lot of their ingredients, so I substituted. :) Makes 3 muffins (and all 3 of them are only 190 calories) 1/4 cup plain yogurt 3 tbsp Parmesan* 1/4 cup oat flour** ~1/2 tsp baking powder dash salt 1 egg white, beaten 1 tbsp almond/soy/dairy milk 1/2 strip turkey bacon 1 chopped green onion Garlic and onion powder to taste Preheat the oven to 400 degrees. Grind 1/4 cup oatmeal in a food processor or coffee grinder until a flour-like consistency (a few second should do). Cook the bacon until it's pretty crispy, and then chop it into tiny bacon bits. Beat the egg white in the bowl and then add all other ingredients. Mix until combined. Measure into 3 well-sprayed cupcake tins (I used cupcake wrappers). Bake for about 21 minutes, or until done in the center. They're good hot or not. :) *I use the powdery Parmesan. It might work with grated, but I haven't attempted it. **I don't eat much flour, so I use ground oatmeal. You can probably use regular flour, though. I haven't tried it, but it should work. |
