Never done this before, so I guess I'll just write out the recipe. I tried these muffins tonight, and I think they are good. I'm not sure if it's Phase 1 or not, but it seems like it is. I used no sugar, fat or flour.
Healthy Apple Muffins
2 1/2 c old-fashioned oats - process in blender to make 2 1/4 c oat flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
- Mix together in a bowl
- In another bowl combine and mix:
1 cup frozen, thawed apple juice concentrate (or try apple mango, etc.)
2/3 cup buttermilk
2 large eggs (or equivelant of egg whites)
- Now combine the wet and dry ingredients and stir only enough to moisten. Add:
2 small Granny Smith apples, peeled, cored and chopped.
- Preheat oven to 375 F. Put cupcake liners in muffin tins and spray with a vegetable spray. The batter will be pretty wet, but you can wait a while and it will thicken. Fill each muffin tin 2/3 full. Bake until lightly golden, about 25 minutes.
