Buttermilk Pancakes
1 cup Stone Ground Whole Wheat Pastry Flour 1 egg 1cup buttermilk 2 tablespoons melted butter 1 tbs splenda (optional) 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt Mix together all dry ingredients. Beat egg, add buttermilk then add dry ingredients and mix until smooth. Add melted butter. Cook on griddle or in small amount of oil in frying pan. When I first made these I forgot to add the butter and they tasted just fine. If you don’t have buttermilk take 1 cup of regular milk and add 1 tablespoon vinegar, mix and let stand for 10 minutes. |
Reminds me of my mom--when she was little that's all she had to eat for breakfast--to this day she hates pancakes!
