Here's my variation of the TripleB Muffins: Jane http://www.3fatchicks.com/ubb/wink.gif * Exported from MasterCook * LF Bisquick Muffins -- w/ Kashi-- 2 pts Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Lowfat Muffins Weight Watchers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium ripe banana -- mashed 1 cup All-Bran® Cereal 1 cup Kashi® Good Friends cereal 1 teaspoon vanilla 1 1/4 cups skim milk 1/4 cup eggbeaters 1 1/4 cups Reduced Fat Bisquick 1 teaspoon cinnamon -- or Apple Pie Spice 1/3 cup dark brown sugar 1 cup blueberries -- fresh or frozen Preheat oven to 400. In a medium bowl mash the banana and add the All Bran, the milk, the vanilla and the egg beaters. In a small bowl mix the Bisquick, the spice and the brown sugar; add to the wet mixture, stir until just combined, do not overmix. Fold in blueberries. Spray muffin tin with Pam and fill muffin cups. Makes 12 muffins. Bake for 20 minutes. Remove cooked muffins from the pan and cool before eating. The muffins are soft when they come out of the oven, but they firm up as they cool. For Sarah:
I store these in the freezer. Place each muffin in a little baggie and then stick all of them into a large, freezer-weight ziplock bag. I like to microwave just enough to thaw and them stick in 325 degree toaster oven for up to 10 mins to "freshen". This is not necessary -- I'm just fussy. Jane |
