You just have to try these muffins I heard about. They are soooo good. OK I got a Betty Crocker Angel Food Cake mix (fat Free) and a 20 oz. can of Dole Crushed Pineapple (in unsweetened pineapple juice) Mix them together. Spray your muffin tins with Pam and fill about 3/4 full. Bake at 350 for about 10-14 minutes or just till starting to get a little golden. Don't try to remove the muffins until they cool a bit or they won't come out whole. I made 24 muffins out of the mix and I calculated them to be 1.69 points each........and they are really delicious!! Let me know if any of you try them!!
I just reposted this original recipe in the dessert section. It started out as an cake recipe (but you can either make it in an angelfood cake pan or muffin tins). You can also substitute lite cherry pie filling for the pineapple or lite strawberry pie filling for the pineapple.
Lemon Pie Filling is also very good. Just my $.02.
And Jade, if you can get a hold of one more 12-muffin pan and stretch out the batter for the Angels to make a total of 36, they come out to 1 point each. I love them too.
Wow, Kelly. Thank you for pointing that out. I never actually looked at the MasterCook recipe or the breakdown -- I just figured the points by dividing up the 12 pieces at 3 points each into thirds!
Guess I can get more for my point money. I like your idea better!!! :0)
