Kalyn's Kitchen is fantastic. Hubs and I eat almost exclusively from those recipes some weeks. My favorites are:
Balsamic and Onion Pot Roast
Baked Chicken with Curry Sauce
Tomorrow I'm gonna try her Pulled Pork and I'm super excited.
All her recipes are for South Beach Diet, and while they work well for other ways of eating too, you have to remember that SBD has specific nutritional goals that might or might not fit with what you want. For example, the chicken in curry sauce is probably quite a bit higher in fat (it has mayo and sour cream in large amounts) than some would want. I just pair it with some roasted broccoli, which I cook at the same time, and call it good.
And that roast is freakin awesome. I'd issue a team challenge to go try it ;-p
Yesterday was kinda meh. We haven't gotten the snowpocalypse here in NC, but it has been gray and dreary all week, and it's starting to get to me. I don't think I've seen the sun since last Saturday. Reminds me of the study abroad I spent in Russia...
This is for yesterday:
W - Water: Check and Check! all 100 oz. Assuming flavored water counts
I - I am strong, strong enough to not give up
N - Nutrition
otally OP, though I was a bit low on veggies. Or food in general actually.
T - time for me... I tried to watch Top Chef last night, but I fell asleep before the Quickfire was over. So, I slept through my time for me >.< At least it's Tivo'd
E - Exercise: Well, I hiked all over campus, does that count?
R - Rest: Obviously. Since I slept through Top Chef =(
