Lunch:
- Veggie Sandwich made w/ Ezekiel Bread

Dinner:
- Homemade Chicken Fajita
- Trader Joe's Avocado Number Guacamole
- Trader Joe's Reduce Carb Whole Wheat Tortilla

Dessert:
- Black Bean Brownie


Water - 64oz + throughout the day

Just for you Pinto, though probably never again:

Today

B-Oatmeal, almond milk, 1/2 peach and 1/2 banana, cinnamon, splenda, 32 oz water, 2 oz "just cranberry" juice

L-1/2 veggie patty sandwich, w/spinach and peppers dropped off by my loving dh. 1 large tomato, 1/2 container roasted green beans.

3 dark chocolate covered pistachios, 32 oz water.

D- 32 oz water,
Waldorf salad, leftover greek salad, roasted green beans, white bean hummus, homemade Ezekiel tortilla chips, homemade salsa, veggies to dip, probably a slice of mozzarella, maybe a beer or a glass of wine, maybe not...still need to input calories into daily plate to determine.

This is going to be embarressing but I have to start posting my food again to get it under control. Today have been a not so great day in a string of not so great days, but if I post todays food, I know I will have to post tomorrows and it will be better
so today I ate
16 squares of choc,
a banana,
a small bowl of tortilini with mustard and cream sauce with leeks,
a beef burger with mayo,
a portion of frys and beans,
a diet coke,
40oz of H2O
and I am having veg stirfry and chicken for dinner.
All in all, not a good day...tonight and tomorrow will be better.

Chicken leg and one slice white meat

Here is a recipe!

Apple-Ginger-Butternut squash soup

Ingredients:
1 butternut squash
2 apples, any variety
1 large-ish sweet potato
about a liter of water or veg broth
1/2 can of light coconut milk
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp cinnamon
salt and pepper to taste



halve the BNS, deseed it, bake for 45 mins or until flesh is tender. When it's safe to touch, scoop out flesh and stick into a soup pot. Peel and chop the apple and the sweet potato. Add to pot with BNS and broth, bring to boil, cook until everything is tender (about 10 mins). Remove from heat. Using immersion blender or regular blender, puree the vegetables. Return to heat and add coconut milk and spices, heat through, consume

I don't know the nutritionals but this tends to make 8 1.5-cup servings, or thereabouts. I count it as 1 point per serving because of the coconut milk.

might as well post some menus while I am in here.

yesterday:
B: 1/2c oatmeal made with 1/2c almond milk and 1/2c water, chopped apple, cinnamon.
L: salad with black beans and various veggies, a bit of pasta salad, banana, hardboiled egg.
S: yogurt.
D: sandwich, baked french fries [yeah yeah, not the best dinner, but portions were correct]

E: 30 min elliptical, 20 min walk

today's plan:
B: oatmeal, almond milk, cinnamon
S: banana
L: tuna salad w/apple over spinach
S: green peas, hardboiled egg
D: pineapple-cashew-quinoa stirfry

may have to add a little something in with lunch, we shall see.

ok yesterday was a bit of an odd day as I was at a job assessment day all day (dont ask)
bowl of cereal and 2% milk
1 hobnob biscuit
small serving of pasta and meat sauce
40oz h2o

all in all way to light a day but I was so stressed about the job thing i couldnt eat. will be better today.

And just to prove the point, there has been a steady drop in my wieght the last fews days...correllating with my posting my food.
