Breakfast - Smart Bacon on toast with mustard, raw spinach and onions and roasted butternut squash (yes I'm a bit weird with breakkie sometimes)

Lunch - Pita and hummus sandwich with sprouts, tomatoes, green pepper, onion, carrots and spinach and order of chick-fil-a waffle fries (the pms made me do it)

Snack - apple

Dinner - spaghetti squash with tomato sauce and broccoli

Lunch - Spinach Salad (mushrooms, sprouts, carrots, tomato, green pepper, peas, edamame, onion and crumbled smart bacon) and rosemary roasted Dutch potato

Snack - apple

Dinner -Whole grain Spaghetti with tomato sauce and gimme lean "hamburger"

Default PMS salvation Roasted Green Beans!



I have decided there is no way to make the finished product look wonderful, but believe me it is wonderful!

Fresh or frozen green beans.

I used 2T olive oil for a huge tray of beans, salt them, bake @ 400*

After 30 minutes I mixed in some garlic paste and some chopped garlic and salted again.

Bake for 30-40 more minutes or until they get crispy to your liking.

Breakfast
bacon and avocado lettuce wrap
1 cup coffee with milk and splenda

snack
2 string cheese, 16 almonds

Lunch
Collard green fritatta
apple

Dinner
Chili Verde made with chicken
1/3 cup brown rice
Green salad

One diet 7 up
8 cups of water

To make chile verde:

saute a whole, cut up frying chicken in 1 T. olive oil
(For those vegetarians out there, I have made this with tofu and it is very good. You just add the tofu at the very end so it doesn't get rubbery.)
take the chicken out when browned
add:
one diced onion
three anahiem peppers or two bell peppers
four or five diced cloves of garlic to suit your taste
saute until tender then add:
three 8 oz. cans of green (verde or tomatillo) sauce, you can substitute green enchilada sauce
red pepper flakes to taste
about 1/2 tsp. of ground cumin

Add the chicken back into the sauce; mix, simmer and stir in a covered pan for about 45 minutes or until the chicken is very tender. You might need to add water if it gets too thick. Garnish with fresh chopped cilantro to suit your palate. Serve with rice, or rice and beans if you are not limiting carbs.

Black Bean Brownies

1 box brownie mix
1 can (15 oz) black beans

Open the can of black beans, rinse well. With beans back in the can, add enough water to cover beans. Put in blender or food processor and puree. Add puree to brownie mix, and then bake according to package directions.

DO NOT add the eggs or oil that the recipe calls for, JUST the black bean puree!

These are very dense and rich and fudgy, you cannot tell that they are not "regular" brownies. Extra protein and fiber, too. I was very surprised just how good they taste. These would easily fix a chocolate craving for me and I don't even really like regular brownies that much!

Notes: I used Progresso Black Beans and rinsed them very, very well in a colander. I only filled the can with water about 1/8 inch above the beans. I added 1/4 cup Hershey's dark fudge sauce to the mix. I pulsed everything, including the brownie mix in my food processor. Prep took less than 5 minutes.

(I would think you could bake these in muffin tins and freeze them immediately if you are concerned about eating too many.)

** No Pizza!! By the time we got there they ran out of pizza
