Well, no tabbouleh, but I made a delish greek salad last night and some baked halibut.

M's Village style Greek Salad
1 large cucumber seeded, sliced
3 cups cherry tomatoes quartered (I used red and yellow)
2 cups parsley, roughly chopped
2 T fresh oregano
1/2 red onion chopped
1/2 c pitted kalamata olives (in water)
1/4 c lemon juice
1/8 c olive oil
salt & lots of pepper

(wonderful organic sheep feta optional)

I would have taken a picture but we ate it all

Breakfast: Kashi Go Lean Cereal with Yogurt, Strawberries and Agave Nectar -

Snack: SBD snack bar

Lunch: baby spinach leaves, wilted under chicken and green beans with a handful of white beans and a few diced grape tomatoes.

Snacks - sugar free creamsicle; 1 Tbs natural PB, 1/2 C FF cottage cheese, 1Tbs agave nectar, and 2 Tbs cocoa powder used as dip for one sliced apple. (DS ate some though!)

Dinner - 2 whole wheat tortillas, spinach leaves, turkey patty pieces, and fat free cheddar cheese.

- I had over 10 cups of water.

not quite enough variety with the veggies today.

YUMM! I love greek salad.. and I always tried to make it but never knew the right amount of herbs nd whatnot.. Thanks! I will be using this one soon tooo.



I LOVE new recipes! It really makes me giddy. I really should go to culinary school of recipes make me this excited.. lol

I LOVE recipes and become giddy over cooking and preparing foods too! I'm also known to take pictures and force people to try vegetables

Greek salad is very versatile, people add all sorts of stuff (green peppers, garlic clove, extra vinegar, etc) I like this classic version and I like it with cheese and without. During tomato season it is a no-brainer. Next time I will take pictures

I would post my food that I have eaten the last couple days, but it has been very bad. We have had trainings at work and I'm in charge of setting up all the food for breakfast & Lunch. Even though I have made a couple good choices, such as fruit, I have also eaten a bagle and some other bad pastries. So I will start posting my food intake in another day or so. I need to get back on track. I find it sooooo hard to resist the food when its in front of me. The food I buy for my house is usualy always good, so then I don't have any temptation to eat it.

stirfryed veg
stirfry sauce made with seseme oil, soy sauce, sweet chili sauce

Liquids:
60 oz H2O
1 cup tea, 2%milk

Its now 8pm and I will only have water before I go to sleep. I am aiming to have eaten my dinner by 8pm at the latest..last nights was too late.

Unhappy menu 09/16/08

Dan Active strawberry yogurt

Kashi Oat and Almond bar

2 purple plums

large coffee with cream and splenda

2 laughing cow cheese garlic and herb

15 Mini Wheats

small slice baguette with lean ham, I slice cheddar cheese, one large tomato and 2 tsp mayo

6 oz rainbow trout cooked in a smidge (smaller than a tad) of olive oil, lemon juice and dill
2 cobs of corn..hey the season is nearly over

8 oz white wine

I don't have anything resembling regular meals right now...house is under construction. I am just waiting and eating something when I am hungry and trying to choose something reasonably good for me.

I have root vegetables roasting in the oven right now. Will let you know if it's a success! Turnips, parsnips, rutabagas, carrots, onions, garlic...a little honey, rosemary and balsamic vinegar.

Anyways, so far today I haven't managed to eat enough. I'm so busy.
B: Balance bar 210 cal
LOTS of coffee with ff 1/2 & 1/2 + sugar 100 cal
L: Rice crackers and hummus 220 cal
1 quarter of dd's grilled cheese sandwich 120 cal

So 650 calories so far. (Subtract the 120 minutes at the gym and I'm net - for calories so far.)

Having roasted chicken breast, roasted root veggies and salad for dinner.

Practiseliving: I tried the lemon pasta tonite! Delish I put a grilled chickenreast on top of it too. YUMMY! Can't wait for tomorrow's leftovers! hehe

Breakfast: 4 grain hot cereal with flax, 1/2 cup skim milk, 3 cups of coffee

Lunch: Apple & Cinnamon Chicken Sausage, 1 1/2 cups of sauteed yellow squash and onions

Snack: 1/2 cup of greek yogurt with 2 TBS of SF strawberry preserves

Dinner: Barbecued Hamburger patty, 1 cup of baby lima beans

Evening Snack: WW Double Fudge cake, 1 cup of skim milk

Total of 1388 calories. I was a bit heavy on the fat and too little protein, so I'll have to work on that tomorrow. And...only 1 cup of water and I forgot my multi-vitamin this morning. I'll work on those two tomorrow, too.
