Good morning ladies! I can't believe it's Saturday morning and I'm up before 10:00!LOL! Madison has a b-day party though at 1 today so I figured I'd do the gym this morning, drop her off at her party this afternoon, and grocery shop while she's at the party:) I was going to do the gym while she was at the party, but then I wouldn't be getting ready for the day until like 3ish and that seemed way to late, even for me:) So that's my plan. Today is just cardio at the gym. Last night I bought myself an 8lb medicine ball...I LOVE IT! I tape my strength training shows off Fit Tv and a lot of them use the ball. I tried a core workout last night with the ball, and WOW what a difference 8lbs makes. I promise I'll get back sometime today for personals. Kyle was feeling awful yesterday, so I never did make it back, and right now I just don't have time. I'm just popping in to say hi while my car warms up. Good Saturday Morning Red team!! How is everyone?
No time for personals this morning, I've got piles and piles of things I need to get accomplished this weekend, and it seems like once I get started on this computer its REALLY hard to get away from it and get to doing what I need to. I didnt sleep that great last night for some reason, not sure if it was because my legs were so sore or what. I've got so much going on in my head with school and PTA, and now starting a new PTA at middle school....not stress just lots and lots of ideas and what I need to get done. My legs dont feel too bad this morning, little stiff but the hot shower helped. I was hoping to go to the gym again today but not sure its gonna happen. So noone had a recipe to share? Muse....it does feel incredible to do a whole hour and my last 2 reps were pretty slow LOL! Good luck at your swim class!! Cant wait to hear how it goes! Okay time to get ready for weigh in!!! Fingers crossed for a good one! |
Good Saturday Morning Ladies!
Had a great weigh-in at WW this morning - I was down 1.2 lbs which is the most I've lost yet for this challenge. It also means that I've lost all of the pre-Holiday and Holiday weight gain. 7 lbs gone since New Years! I chickened out of doing the Zumba class this morning - I'll do it next Saturday, I should be able to work up the nerve by then. I've always had trouble exercising in a group setting until I do the first couple of classes and then I'm hooked. Melissa - I have lots of great new recipes that I've tried over the past few weeks in my Sunday cook-a-thons. I'll post some either later tonight or tomorrow. Have a great day everyone! |
That would be fantastic Deb!! I'm looking forward to them! I'm hoping to find some new stuff. I've fallen in love with crock pot recipies where I can throw stuff in and go! Way to go on your weigh in!!! That is FANTASTIC!! Excellent job this week, keep it up!! Can you believe I still dont have my holiday gain off yet....course it was 19 lbs! OYE!

Stove Top One-Dish Chicken Bake
SERVES 6 .... 4 POINTS EACH Ingredients 1/3 cup fat-free sour cream 1 package bread stuffing dry mix 1 pound uncooked boneless, skinless chicken breast, cut into 1-inch pieces 1 2/3 cup hot water 1 serving 98% fat free cream of chicken soup instructions Preheat oven to 400 degrees. Add hot water to stuffing mix; stir just until moistened. Set aside. Place chicken in 13 x 9-inch baking dish or 2 quart casserole dish. Mix soup and sour cream until well blended; pour over chicken. Top with stuffing. Bake 30 minutes or until chicken is cooked through. TERIYAKI PORK TENDERLOIN MAKES 4 SERVINGS .... 4 POINTS EACH 1 lb. Pork tenderloin 1/4 cup reduced sodium soy sauce 1 tbsp minced peeled fresh ginger 2 garlic cloves minced 1 tbsp seasoned rice vinegar 1 tbsp packed dark brown sugar 1 tbsp cornstarch. 1.) Spray a large nonstick skillet with nonstick spray and set over medium high heat. Add the pork and cook turning frequently until browned...about 6 minutes. 2.)Transfer the pork to 5-6 quart slow cooker. Combine the soy sauce, ginger, garlic, vinegar, brown sugar, and cornstarch in a bowl; pour over the pork. Cover and cook until the pork is fork tender...3-4 hours high....6-8 hours low 3.) Transfer the pork to a cutting board and cut into 8 slices..serve with sauce. 3 pt chicken pot pie SERVES 12... 3 POINTS EACH Ingredients 1 pound cooked, skinless chicken breast(s) 8 oz Campbell's (U.S.) 98% Fat-Free Cream Of Chicken Soup 1 package frozen mixed vegetables 1 cup reduced-sodium chicken broth 2 cup Bisquick Reduced-Fat Baking Mix 1 cup fat-free skim milk instructions In a 9x13 pan add the chicken and veg's(Thawed).Mix the Soup and chicken broth, pour over chicken and veg's. Mix the bisquick and milk, evenly pour over the chicken and veg's and soup mixture. Bake at 350 F for about 1 hour Enchilada Casserole 1 pound (leanest) hamburger (we used venison)--- browned and drained 1 medium onion--chopped (I cook it with the burger) 1 can Campbell's 98% Fat-Free Cream Of Mushroom Soup 1 can Campbell's 98% Fat-Free Cream Of Chicken Soup 1/2 cup canned enchilada sauce 4 oz canned chopped or diced red hot chili peppers or green chilis 1 cup fat-free evaporated milk 1/2 pound monterey jack cheese 12 small corn tortilla(s) (torn in pieces) Combine ingredients except cheese and tortillas in a sauce pan until warmed. Pour a little sauce in the bottom of a baking dish. Top with 1/2 of tortilla pieces and then 1/2 of cheese. Then I put the rest of the tortillas on the cheese, top it with the rest of the sauce and the rest of the cheese. Bake at 350 for about 45 minutes to an hour until top is hot and bubbling! Sometimes I serve it on top of shredded lettuce or spinach (to get in some more veggies!) and top with a serving of FF sour cream! Very yummy! 12 servings/ 5 points each Mexican Chili Beef Burgers Ingredients • 1 pound uncooked lean ground beef (with 7% fat) • 1/4 cup onion(s), minced • 1 1/2 tsp minced garlic • 1 1/2 Tbsp chili powder, ancho variety • 1/4 cup canned tomato juice • 1 large egg white(s) • 1/2 tsp black pepper, freshly ground • 1/2 tsp table salt • 3 medium tomato(es), ripe, diced (about 1/2 cup total) • 3 medium radishes, diced, (about 1/4 cup) • 1/3 medium avocado, Hass, diced • 1 Tbsp cilantro, fresh, chopped • 1 Tbsp fresh lime juice • 1/4 tsp table salt • 4 reduced-calorie hamburger roll(s), toasted on grill Instructions • Preheat grill (or grill pan) to medium heat. In a large bowl, combine beef, onion, garlic, chili powder, tomato juice, egg white, pepper and 1/2 teaspoon of salt; combine thoroughly. Form mixture into 4 patties, about 1/2-inch thick each. Place burgers on grill and increase heat to medium-high; cook for 5 minutes. Flip burgers and cook for 5 minutes more. Flip and cook 1 minute more on each side for medium (and longer for desired degree of doneness). Meanwhile, make salsa. In a medium bowl, combine tomatoes, radishes, avocado, cilantro, lime juice and 1/4 teaspoon of salt; mix to combine. Serve each burger on a roll topped with about 1/4 cup of salsa. Slow-Cooker Cheeseburger Soup POINTS® value | 5 Servings | 8 Ingredients • 2 sprays cooking spray • 1 medium garlic clove(s), minced • 1 medium onion(s), chopped • 1 medium stalk celery, chopped • 1 pound uncooked lean ground beef (with 7% fat) • 2 Tbsp all-purpose flour • 3 cup canned chicken broth, divided • 1 cup low-fat evaporated milk • 8 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product, or similar product, cubed • 1/2 tsp paprika • 1/4 tsp table salt • 1/8 tsp black pepper • 24 items baked low-fat tortilla chips, crumbled • Coat a large nonstick skillet with cooking spray and heat over medium-high heat for about 30 seconds. Add garlic, onion and celery to skillet; cook, stirring frequently, until vegetables are tender, about 5 to 10 minutes. Coat a 3-quart or larger slow cooker with cooking spray; spoon in vegetables. Place same skillet over medium-high heat and brown beef, breaking up meat with a wooden spoon as it cooks, about 5 to 6 minutes; pour off any liquid and add meat to slow cooker. In a small cup, combine flour and 1/2 cup of broth; stir until lump-free. Pour flour mixture into same skillet; add remaining 2 1/2 cups of broth. Bring to a simmer, scraping up any browned bits in bottom of skillet with a wooden spoon, and then pour into slow cooker; stir in evaporated milk, cheese, paprika, salt and pepper. Cover slow cooker and cook on low setting for 2 hours. Serve soup topped with crumbled chips. Yields about 3/4 cup of soup and 3 tablespoons of chips per serving. Warm Brownie Sundae Cake POINTS® value | 4 Servings | 12 Ingredients • 1 sprays cooking spray • 2/3 cup all-purpose flour • 3/4 cup sugar • 1/4 cup unsweetened applesauce • 1/4 tsp baking soda • 1/4 cup unsweetened applesauce • 3 Tbsp vegetable oil • 1 large egg(s) • 1 medium egg white(s) • 1 tsp vanilla extract • 3 cup fat-free vanilla ice cream • 3/4 cup chocolate syrup, fat-free • Preheat oven to 350°F Line an 8-inch square baking pan with aluminum foil. Coat foil with cooking spray; set aside. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, sugar, cocoa and soda in a medium bowl. Combine applesauce and next four ingredients and stir with a whisk; gradually add to dry ingredients, stirring just until blended. Pour batter into prepared pan. Bake at 350°F for 18 minutes. (Wooden pick will not come out clean.) Cool in pan on a wire rack. Cut into 16 squares; cut each square in half diagonally, creating triangles. Arrange two triangles on each serving plate. Spoon 1?4 cup ice cream on top of each serving. Drizzle each serving with 1 tablespoon chocolate syrup. Serve immediately. Yield: 12 servings (serving size: 1 brownie sundae). |

Good morning teamies! I missed you all.
I'm back from my mom's. Thanks for all the good wishes. She's really doing remarkably well. One of her best friends died of cancer recently and the funeral is today. So she'll be going to the funeral and that will be her first real outing since surgery. She thinks she could get by using her cane to walk, but my dad is insisting she use the walker since she could get jostled by the other people in the church. I did great at my mom's house. She asked me to go buy her chocolate chip cookies and ice cream (my temptation). I didn't eat any of it. I got myself one of the 100 calorie snacks instead. So I was happy about that. Had a good night out, though I ate more than I should've afterward. Good stuff though - I had some whole wheat crackers, some prunes, etc. And I'm not beating myself up about it because today I am staying totally on-plan, and then doing a really long run tomorrow. Hopefully 17 miles!
I post recipes for everything I cook on my blog. I just started doing that about a month ago, but there are 40 or so recipes up there now. I include calorie information for everything, as well as a link to the entry on DailyPlate where you can get the rest of the nutritionals - so if you want to calculate WW points, it would be pretty easy. Most of the meals I cook are 400-600 calories. Hope that helps someone! |
Kari- I tell ya getting my 11 yr. old son to do anything around here is like pulling teeth. He does it, but like you said yours does, he takes lots of short cuts! Thank you for posting all those recipes. That soup sounds really good:)

So I am in Walmart today to pick up a few things I couldn't afford yesterday, and I looked at all these cute skinny girl clothes and wished I could get them. O'well.....I decided I best get my butt back on the treadmill and get to work and maybe by years end, I WILL be in the pretty clothes sizes. Anywho...I cruise on over to the Teeshirts because I need a couple more to wear to the GYM and yanno, I just couldn't bring myself to buy ANYMORE FAT clothes! I am just so sick of having to buy 3x shirts dang it! Has this happened to any of you? I'm over it.... Anyway, I have a VERY busy week next week. Gotta get the dog fixed, a cat, me and Matt BOTH have doc appt's on Tuesday, another one on Wednesday....gotta look for a job...I feel so self conscious about going out and looking for ajob. I feel like not only do I have the fact that i haven't worked in 6 yrs going against me, but I also have my weight, yanno? I may apply for one @ Dollywood... I dunno...sigh....much to do, PLUS I am gonna work out as much as possible. I'm staying OP on calories. We are eating "cheap" for last week and this next one, which means, not a lot of fruits and veggies and stuff that's good for me, it means a lot of SODIUM! I can just feel that I am retaining water, YUCK! Wi is prolly totally gonna suck. i may call and see if the Community center is open tomorrow and try to get in a "last chance" workout, lol! BTW, I did do some exercises during the commercials for about an hour during TBL. :) Thanks for the inspiration Mel! |
I'm back. Taxes are done (even getting a refund for both federal and state - YEAH!). Laundry is done. I FINALLY got airline tickets for spring break. We were thinking we would have to drive (visiting my Mom in Knoxville area) since the airfare has been rediculoulsly high since October. Prices finally dropped this week. I put in a low bid - and :) we are flying down the end of March.
Sounds like our sick chickies are back to normal (for the most part). Lots of exercise going on and some incredible willpower being shown as well! You guys are GREAT! Keep it up - and enjoy the rest of your weekend :D |

Hope you are all enjoying a happy and healthy weekend. I spent the day at the Band Garage Sale. It was fun but I forgot to take any money with me. There were some great hand crocheted blankets going for a song. Oh well, it was fun just watching others get some great bargains and it was all for the band. Cool! Right now I am trying to stay awake waiting for my daughter to get back from her Boston trip. My husband and I will be picking her up when she calls after arriving back at the school. I can't wait to see her although the first thing she is going to want to do when she gets home is get on the phone with her boyfriend. Young love! I think I am doing well eating wise but the scale does not seem to realize I am doing everything right here!! I am not too worried though. Maybe I am eating more then I realize and I need to do better next week. Perhaps I will still see a small loss before Monday's deadline. Did not get to exercise yesterday or today due to stuff for the garage sale but should be going to both Pilates and Zumba tomorrow. Counting-How nice you got a good deal on the airline tickets to visit your mom. Diva-I have been reading your new blog. I like your outlook. Good luck on the C25K. Sorry I have been so absent. I am going to try to catch up this afternoon and see how everyone is. The last 2 weeks have been super busy with training for work and I am still in a sort of holding pattern until I finish my in-house training. So I will do my best to post more! Scale is at 196, so that's a 3 pound drop for me. I should behappy but I feel I lost some muscle in the last few weeks because I haven't been able to be at the gym more than twice a week. I am hoping I get a schedule for the next week so I can plan my workouts for the week as well. Well I am off to get ready for church, will catch up later. Just letting you know I am still alive! |
