  • Morning Ladies …well I’m happy to report that I did stay OP all day yesterday…even thru feeling bad …I had a slight headache and just in general didn’t feel well…but I know I did it to myself.

    I made sure and got all my stuff for work ready last night so I’d have no excuse to not eat right today. Speaking of , do you all work ? If so do you bring your lunches to work ? I have a hard time thinking of something to bring everyday that I can brown bag. I would like to find a good low carb casserole and then just have a square of it daily, that would be easiest.

    Sue – I think an induction thread would help me. I think I’m gonna have to do induction for a while now since I messed up a few weekends lately. I also was SO excited about getting into the two teens, and then the single digit twos …and now I’m just trying to get under 200 ….slowly but surely.

    Sarah – Sue had a good idea …get the carb free noodles and put some of the rich sauce on them, that way you’ll at least feel like you are splurging some…easier said than done right ? haha …I personally cannot eat those noodles unless they are really covered with some kind of sauce anyhow.

    Pixi – yeah I think I’m going thru a little Atkins flu but not major …knock on wood.

    Sounds like we all are ready to recommit from our carby weekends. We can do this.

    Carri - I frequently make crustless quiche and reheat it later for quick dinners. I work part time on campus and take classes. In Jan I put $800 on my account so if I am on campus all day I will get a salad from subway or eat in the dining hall. Other than that I will sometimes have a quest bar for lunch. I also carry around nuts in case I get munchy when there is no good option available. I bought macadamia nuts and a couple different flavors of almonds, mixed it altogether in a huge bowl and used my food scale to portion out 1oz bags
  • I'm back in "the zone" now, no hunger, enjoying the foods I was smart enough to make ahead & put into the freezer this week (plus my husband bought a ton o' meat at the butcher 2 nights ago) - a little short of veggies but my garden lettuce is needing to be eaten so I've been consuming that.

    I'm not worried about my friend's visit, she's kinda lower carb too (depending on where her weight is that month) and she's not a food pusher at all... just need to make sure I have a menu planned to make everyone happy.

    I'm maybe in the minority but I really dislike those shirataki "miracle" (no carb, glucommannan) noodles. The smell, the texture, the goopiness, ugh - I've had them a few times, frankly I prefer to eat sauce over a pile of broccoli or green beans than to have it on those noodles! I know for some low carbers they are a life saver, but not for me...

    I forgot to weigh in this morning. Well, didn't completely forget but the scale is still inconveniently located where my baby daughter is sleeping and she slept late this morning while her brother was up early and I just never got there to weigh in before I'd had my coffee and water... Funny how I was so religious about weigh ins for so long and now if I miss a day it's kinda no big deal...

    I have never tried those noodles... someday I would like to as I found a Fettucini recipe in that Fat Fast cookbook that I bought... hhmmm with grilled Chicken.. yum...

  • Morning All – still too scared to weigh in but as Sarah said I also feel like I’m back in “the zone”…last night I made this chicken and cheese Mexican casserole that I found online, it was actually really good and filling…I brought the leftovers for lunch ( I can post recipe if anyone is interested, it really helped me with my Mexican craving , 5 carbs per serving ) …I need to start making extra dinner and then just bringing to that work the next day every week …gonna be a lot easier.

    I’m rewarding myself with a pedi this Saturday with a friend at our favorite spa…looking forward to being pampered some and it’s not a food related reward which is what I normally would go for.

    Sue – I agree with Sarah, I have never liked those noodles …I have tried them twice with two different sauces and both times the texture got to me…plus that smell is hard to wash off …but my friend loves them and uses them all of the time …so I guess you should still try and see.
    CONGRATS on breaking into the two teens today !!!!!!!

    Pixi – crustless quiche is a good idea, and so many ways I could change it up …

    Sarah – It’s good that your friend is not a pusher, I have a few of those around me…especially at work, haha. We have pitch in’s a lot at work ( where everyone brings in a dish to share ) and there is never anything that I can eat …I usually end up bringing a low carb dish for myself …we always have a ton of dessert that people keep asking me to try all day long…it’s a nightmare

    Hope you all have a good day …I better go eat some breakfast …couldn’t think of anything that sounded good this morning so just grabbed a cheese stick and some sausage links …now that even sounds gross, lol

  • It's a party!! Sue's in the teens! You have been so committed and worked so hard for this Sue. I'm really super proud of you. Revel in your glorious accomplishment. Getting to the teens is really a big deal! Well done!

    I happen to like the shiritaki noodles. Trick is to rinse and soak forever. Then I boil for 3minutes, then throw in a hot skillet to dry them off. After that I toss in grilled chicken breast and 2T of Jalapeño Philly cream cheese. Awesome for a change from plain meat nd salad.

    My son arrives tomorrow for 10 days. Bring on the social eating challenges. I have hovered between 150 and 152 for two weeks. Finally back to 149 using Atkins 72 version for the last week. Want to stay here not gain. Walking daily. An hour of Pikates Reformer class 3-4x a week.

    I have never tried the noodles, but what you guys have all said are what I keep hearing, some people adore them and some hate them. I figure I will get around to trying them, esp since calee's recipe sounds delish

    Satine - I would love the recipe! I adore mexican food I have been going to chipotle or freebirds for my mexican fix since starting low carb and doing their salad bowls on days when I have lots of calories and carbs left. Lettuce, fajita meat, guac, sour cream, cheese and salsa yum yum!

    The quiche can be mexican too if cooked with something like chorizo, some spices and perhaps some homemade pico so you know no added sugars. I think salsa would be watery enough it wouldnt set right but could go on top

    I usually make a large 8x11 dish out of 18 eggs, 10tbsp heavy whipping cream, some sort of meat (pepperoni, bacon, ground beef, or chorizo are ones I use alot) 2 cups of whatever shredded cheese goes with the flavor (italian blend with pepperoni, mexican blend with chorizo etc), sometimes I will also add some veggies, spinach works well. I usually turn this into 6 large servings. My last one which was pepperoni and salami was 631 calories 4g carbs, 1g fiber, (3gnet), 36g protein and 51g fat
  • Oh yeah Pixi, that quiche you made sounds awesome !!!!

    Here is the recipe for the casserole I made :

    Chicken Casserole Verde

    INGREDIENTS

    4 cups cooked chicken (or turkey) -- shredded or cubed

    2 teaspoons Taco Seasoning (you can make this yourself)

    8 ounces softened cream cheese (Philly light has slightly fewer carbs by the way)

    1 tablespoon minced green onions or chives

    7 ounce can Green Mexican Salsa (we used green enchilada sauce)

    4 ounce can chopped green chiles

    6 ounces Monterey jack cheese, shredded (you could make it spicier by using pepper jack, though it is a bit more carbs)

    4 green onions, chopped (this is just to sprinkle on top)

    Optional: we would add some super-thin sliced jalapeno and some red pepper flakes 'cause we're hot-spicy addicts but that's up to you.

    INSTRUCTIONS

    1. Heat oven to 350 degrees while you grease a full size baking pan and put the chicken in it.

    2. Add the taco seasoning and mix the chicken around in it to coat.

    3. Mix cream cheese with the onions/chives and green sauce in a medium bowl. Stir in the chiles.

    4. Pour sauce evenly over chicken and top with the cheese.

    Bake for 25 minutes, until hot and bubbly. Remove from oven and sprinkle with green onions.

    Makes 6-8 servings.

    Poster's note : But personally I would figure it out yourself based on what you add, because mexican sauces in particular vary widely.

    I let this cool for about 5 mins so it would firm up ...I put on plate and topped it with a spoonful of sour cream and jalapenos ...I also made my own taco seasoning since the packages in stores have sugars.

  • It doesn't say but I made this in a 11x7 casserole dish ...I think even a 9x9 would be good and make it thicker ...

    I don't know how accurate her nutritional information is but I did figure mine at about 4 carbs for 1/6 of the recipe ...

    Calee I think 7-9 was the age range I started "plumping up" and it has definitely been a struggle ever since. I hope I can come finally 'overcome' the battle as you have!
    Carri I definitely had some headaches last week when I was getting back on plan...but TOM hit about the same time so its hard to say exactly what had me feeling bad!
    Sarah your right...Not being prepared mentally and physically can definitely set us up to fail! It is very easy to say...oh I don't have the food I need to stay on plan so I might as well eat what I want tonight. Or... its just not fair...its a party and everyone else is eating what they want why can't I...Without a doubt, having the on plan food and the "talk" with ourselves before the party will enable our chances of being successful!

  • Morning !!! So I finally had the nerve to get on the scale this morning after last weekend’s 3 day carb fest and ……………………I’m still up 2.2lbs …ick …I did have a pretty salty dinner last night ( pizza skillet , one of my faves ) …so that might be part of it …but hope to have some movement in a good way come Monday or Tuesday …don’t know if you guys use the strips, but I checked this morning and I was in ketosis ( usually I only use those during an induction phase, I know some people think they aren’t a good way to tell anything ) – so I’m feeling I’m back on track.

    Sue !! I didn’t realize that you had lost over 100lbs …that is so awesome and inspiring …I bet it is the salt you had last night …I’m betting by tomorrow or Sunday you are back in the two teens.

    Carol – yeah, unfortunately my TOM is next week so I’m pretty sure the headaches may stay around for a while …

    Yes, you ladies should try that recipe …it was so good …I love Mexican food and really miss my tortillas…so I have been on the lookout for something like this. I am going to make it on Sunday and divide it up in dishes for my work lunch all week ..it’s really filling with all that chicken protein.

    Here’s to an OP weekend for all of us …and not what happened to a few of us last weekend, lol . I have a busy weekend so I might not pop in here.

    Sue, you will gt back to the teens and it will stick soon. You always gt down and your body fights you for the higher number, then gives in.

    Congrats to everyone for hanging in there.

    I'm still trying not to obsess bout the numbers and just stick to plan. I'm finding I can see a gentle drop in ounces daily if I stay focused and stick to LC. I have been eating a few more veggie carbs in the form if lettuce and celery, adding. Bit of red pepper and red onion to the evening salad. I'm back to a lower wight from March but we're only talking 3-4 pounds. I'm making my July challenge weight if I have to fast the last few days. I'm finally back to a good exercise routine after that month off because of my ankle injury. I think it helps me.

    Son is coming home today for 10 days. Always more eating out. I can stick to plan. Today I am making a pot of Paleo Choolate Chili. Light on the tomatoes, heavy on the organic grass fed beef. I want an easy grab nd go in the fridge for the two of us.
