Thyroid & low carb recipes
 
I noticed that there are a lot of crust, potato, and rice substitute recipes that call for cauliflower which is among those foods that I was told as a child to not eat too much of because they would make my goiter worse. One of my aunts had a goiter big enough to make her neck look very icky, so when I was diagnosed with Hashimoto's Thyroid w/a small goiter I became very conscious of what veggies I ate. Frankly it gave me a great excuse to avoid a lot of things I didn't like. Does anyone else worry about goitrogens in low carb recipes?

I don't have any concerns. I do not have thyroid issues though. I don't think that the amount I eat would cause me a problem. Maybe ask your doctor what amound would be good for you.

Raw cauliflower, broccoli, cabbage and other members of that family are what you want to limit. Cooked is okay. I'm also hypothyroid.

Yes, I know that general opinion today is that cooked is okay, but since different levels of cooking destroy different components of an item, and that highly processed soy and gluten products are still suspect, I would rather be safe than sorry. Apparently this is my own anxiety about disfigured throats and necks, I'm a little neurotic about a lot of things :dizzy:
