AHHHHHH Yummy Cauliflower Soup for Fall

  • At last!!! The looooooong hot summer is gone here in Texas! It just about wore me out

    So now it's time for some yummy cauliflower soup. I went shopping today and got the ingredients for that, some egg/sausage/bacon quiche (I make mine in individual cupcake holders ) and I am also going to make some delicious Thai cabbage stir fry this weekend. I love cooking inside or out in the Fall
    It just puts me in a haaaaaappppppy mood

    PLUS since starting back on Atkins on September 14, 2011 I've lost 18 lbs.!

    And I'm in deep south Texas (south padre island) and it's still 99 degrees here, so no fall soup for me...yet!

    I make my cabbage soup as thick as a potato soup, with lots of cheese. Sometimes I throw in bacon bits....it's sooo good.

  • Thanks so much I'm pretty stoked about it. This is my 3rd time on Atkins. I just really had to get into the right mind set to do this. My job is really high stress and I had totally went off Atkins and gained 28 lbs in the process. I'm still at the high stress job, but just decided to take control of my life again. I think part of this initial success is due to the amount of water I'm drinking and that there is a lot of walking and lifting in my job, so the physical activity is higher than before. I turn 50 in Feb. and I am sure wanting to be at 175 by then
    I go to SPI pretty frequently with my kids. I am in Fort Worth now, but I am originally from Galveston. Nice to meet you and good luck with your weight loss

  • Sure! My pleasure. Now I used leeks but you can use green onions as well.
    Islandchick's Cauliflower Soup with Leeks

    2 celery stalks...diced
    1/2 c. butter
    1 clove of garlic...minced
    3 leeks diced (Use the white tops and about a third of the green bottoms.....minced. You can also use green onions instead of the leeks. If I do that, I use almost all of the green part as well.)
    1 head of cauliflower (stalk and leaves removed; cut it into 4 quarters to help it cook faster.)
    2 1/2 TBPS of olive oil
    1 can of chicken broth
    2 cups heavy whipping cream
    2 to 3 cups of water.
    1 8oz bag of the cheese of your choice. (I use the finely shredded 4 blend Mexican cheese.)

    I put the cauliflower on to boil for about 20 minutes; leave it in quarters.
    While that's boiling, I sautee the leeks (or onions), garlic and celery in the olive oil...takes about 10 minutes or so.

    I drain the cauliflower but save about 2 cups of the water. *I put the cauliflower and the water I boiled it in into my blender and mix it up really well. The consistency should be like a watered -down mashed potatoes. I pour that mixture into the pan I boiled the cauliflower in. I add the sauteed veggies, the chicken broth, the butter, the extra water, the heavy whipping cream and stir. When it is nice and hot and mixed well, I add the whole 8 oz.bag of cheese. Since this is feeding serveral people, I don't worry about using all 8 ozs. of the cheese. I stir in the cheese until it's melted completely. I use salt and pepper to taste and add some additional garlic and onion POWDER to taste. You just won't believe how awesome this tastes on a cold winter day

    *Note: If you have an immersion blender, it's made to handle hot foods. If you're using a standard blender, you may want to cool the cauliflower/water mixture quickly before blending it. I just set the pot on a layer of ice I've created in my sink for a few minutes. Sometimes hot liquids in a blender will "blow up," leaving you with food and liquid all over your kitchen.

  • I meant to write cauliflower soup, not cabbage! I'm so sorry. I had cabbage on the brain. I have some in my fridge and I was thinking of sauteeing it with bacon and onion and serving it as a side dish. My husband put the big ka-bosh on that, let me tell you.
