1 hard-boiled egg, 4 slices crisp bacon, 3 c. coffee

1 Lavash, toasted w/ homemade pimento cheese
diet orange soda
1 bottle water

1 Jillian Michael's protein shake made w/leftover coffee, water, sugar-free chocolate syrup, splenda, a splash of hwc - in the blender with ice. YUM!

Dinner? Maybe a BLT salad - Nope, Dinner revision - ground beef that needs to be cooked
Meatloaf - made with Heinz Reduced Sugar Ketchup - 1 carb per T.
Creamed spinach
(I can't tell the difference between it and regular ketchup)
Finished orange soda
Bottle of Lemon Zero water

Almond-flour chocolate cake w/ hwc

OMG, I love meatloaf sandy! I make it with the 1carb ketchup baked on top and serve it with the cauliflower puree - comfort food rocks.

Today: um, very low carb. Not feeling especially good today - maybe sinus?

Got up and drank cup of coffee with cream.
Felt really tired - took a nap. OH NO, I hope my fatigue isn't returning, that's what it felt like.

Woke up, ate can vienna sausages, diet soda.

Another diet soda.

Cheeseburger salad - ate 3 burger patties, spring greens, mayo, brown mustard, pickles, shredded cheddar, wished I had some bacon and tomato, but none on hand. Diet soda - then another diet soda. The 3rd patty was afterwards cause I wanted some more.

I'm wishing for popcorn in the worst way. Any ideas for a popcorn substitution? Buttery salty crunchy ideas? I think it's our saturday night tradition wishin'.

Kel, I hope you're feeling better. Sinus problems are NO FUN! They make you feel yucky all over.

Okay, popcorn substitute? Kale and spinach leaves are delicious baked with a little olive oil and sea salt until crispy. There's a link to baked spinach chips (you can also use kale) below.

And fried or baked green beans are a big hit on several low-carb boards. Here's a link to "Low Carb Friends" thread devoted to green beans, salty and crispy. I'd be inclined to bake the green beans instead of frying them (both recipes and hints are on the thread) 'cause it seems that putting frozen beans into a hot pan with oil would make a huge, sputtering mess on the stove.

Or, could you heat pork rinds with a little butter and sea salt? I've made the spinach and kale - really tasty! I hope you find something you like.

Sandy and Kell, What do you put in your meatloaf? All the recipes I have use bread crumbs or rice :(

So far today I've had eggs with broccoli and cheese and sausages
and 2 cups of coffee with cream.
I think it will be tuna for lunch.
Salmon and salad for dinner.

Puncezilla, here's what I put in basic meatloaf:

1 lb. ground beef (I usually use 90/10 or 85/15)
1 egg
1 T. water
2-3 T. low-carb ketchup (I use Heinz Reduced Sugar Ketchup)
1 chopped onion (I like Texas Sweet or Vidalia onions)
Minced garlic, salt, pepper to taste
* After about 30 min. I usually pour off accumulated fat and top meatloaf with additional ketchup.

Preheat oven to 375 degrees.
Mix everything with clean hands gently. Shape into a rectangular loaf. Place on foil-lined, non-stick sprayed pan and bake 40 minutes - 1 hr. Let meatloaf stand for a few minutes before slicing.

There you go. Enjoy.

All I put in a meatloaf is loads of spices - they usually have a theme - mexican, tex mex, garlicy, etc based on my mood and some egg. Topped with a little 1 Carb ketchup part way through. I cook it on a pan that drains the grease away, at DH's preference and am careful not to overcook - so as not to make it dry.

I just made a menu for my week in my budget efforts. Sunday - roast and veg, Monday - steaks, salad and something with eggplant - any suggestions? Tuesday - Joe (Dana Carpender recipe), Wednesday - chicken alfredo, thursday - beef and cabbage, Friday - pizza dump. Pretty good plan, uses up a lot of food we have laying around.

Today: um, almost didn't eat. Coffee and cream. Then another nap. I think I'm getting a sinus infection.

Pork skins, french onion dip, diet soda when I woke up.

Roast started for supper - English beef roast (my fave), carrots (got 'em cheap), turnips and rutabagas I had laying around. Wish I had an onion too. :(

Here's my disaster for the day: my ten-year-old microwave QUIT HEATING! WHAT? It lights up, takes the timer/temperature, turntable spins, but NOTHING COOKS. It won't even melt butter properly. WTF????

I immediately checked "Troubleshooting" on line - apparently, you don't work on your microwave. Very dangerous! Then I shopped Lowe's and Walmart's sites for a new one. Then I remembered a new microwave is NOT IN THE BUDGET! So, I think I have to cowgirl up and live without one until the end of August - I go back to work and will start getting paid again.

Kel, have you checked the low-carb divas' sites for eggplant recipes? Goggle up Linda's Low Carb Menus and Recipes; she has lots of great recipes for almost everything. I'd be very tempted to slice that eggplant, salt it, drain the slices, dip them in egg and cheap canned parmesan cheese and fry them up. But that's just me...I love a fried veggie!

Flipped meals - roast is now for tomorrow night. We went with salad, steak bites, and EGGPLANT BRUSCHETTA. Sliced eggplant, salted, let drain in colander for 30 or so mins, rinsed, patted dry. Topped with drained can of italian diced tomatoes. Baked 7 mins ish at 375. Added mozarella, parmesan and broiled 2-3 mins until brown. I'd rate it about 7. It's good, but it needs something. Maybe it's the crunch I miss of bruschetta?

While waiting on supper I ate a piece of cheese and a cheese cracker DH made.

Thanks for the meatloaf tips :) I have some ground beef in the fridge waiting to be meatloaf.

Today I had Bacon and eggs for breakfast and one cup coffee with cream.
Leftover Cauliflower mash and steak
Snack was leftover breakfast sausages.
Had steak last night so saved the salmon for tonight with some stir-fried broccoli and zucchini.
Also snacked on a few strawberries and blueberries.

B-2 scrambled eggs w/ sausage and bacon bits
L- lowcarb "corndogs"-I used flax and egg to make the batter and then dipped them in hot mustard sauce-SOOO good!
D-all this talk about taco dump has me craving it, so thats whats for dinner :)

OK, I been a slacker on this.

B: cheated a bit - 1 slice french toast with syrup, 1 sausage patty, coffee with cream - the french toast just looked SO GOOD I went weak for it.

L: Taco Salad - naked - totally on plan - about 12 NC

d: Leftover beef roast and veg - also OP. Not sure how many carbs, as I didn't measure.

Sn: 2 cheese sticks and some pork skins.
