Savory Flaxseed One Muffin (they're so much better in taste, texture, smell if you add 1 T. sour cream to the basic recipe) split, toasted with melted cheddar, bacon and mayonnaise with a side of Dottie's Green Bean Casserole. Odd combination maybe, but I had the green bean casserole left from a company meal yesterday - delicious, easy dinner for me.

I just cooked an awesome filet mignon...crispy on the outside, rare on the inside. I sauteed some mushrooms to go with it.

Lunch I'm having 2 stuffed chicken breasts (unbreaded) I get from Walmart. 3 carbs per breast. :)

After hearing all the talk about the White Castle Cheeseburger pie I finally made it tonight. I added bacon and a small can of green chilies and it was very good! I doubled the recipe and baked it in a 9 X 13 pan hoping to get a couple of meals out of it but my DH and the oldest boy put a pretty good dent in it! I served it with steamed broccoli. Thanks for turning me on to a great recipe!

I had a delicious chili. We cooked a roast in the crock pot, and then simmered two cans of tomatoes (one italian and one diced) with onion and homemade chili seasoning. Then we shredded the roast and threw it in with the tomatoes and let it simmer. I took a bowlful out and then added beans to the big pot for everyone else. We topped it with some shredded cheddar cheese and chopped onions.

Lunch out today with a good friend. My order: shrimp salad on a bed of greens, onion, tomato, and a bleu cheese vinaigrette.

Tonight it's a golden flaxseed OMM with homemade pimento cheese and a green salad, ranch dressing. I might grill my sandwich...nommie, nommie.

We have a pizza place in town. But no worries no pizza here. They have the best chef salads EVER. I ordered one and have enough for two meals. Dessert-Lime Jello with 1 T of homemade whipped cream and I'm a happy stuffed camper.

Roast with salad and ranch vinaigrette. Dessert was a custard cup full of carbsmart ice cream mixed with some sugar-free orange Torani.

To reheat hard boiled eggs I put them in a bowl and run them under hot water. Or instead of wasting water I boil some in the kettle and pour it on the hard boiled eggs and let them sit for 2-4 minutes. Much easier than cleaning up egg shrapnel all over the kitchen : )
