Last night I had the beef stroganoff recipe I posted a few days ago again. So good! Definitely a must try. I tweak it a little bit. I make it a one pot dish by not boiling the broth in the beginning with the carrot and the bayleaf and instead just adding it when the meat is going to be simmered later. I used cooking sherry instead of the wine (that's all I had). For the meat I used a big top sirloin steak cut into cubes.

Tonight is chili. Ground beef, canned tomatoes, chili seasoning and onion in a crock pot for a few hours. Quick and easy.

The painters finished my ceilings today; they're beautiful. They're old wide boards, now all recaulked and sanded a bit and freshly painted. Love it.

Dinner tonight: Sam's Choice (from Walmart) chicken breast stuffed with artichokes and spinach. Not bad for 3 carbs...side of Steamers veggies - minus the carrots. 1/2 of an orange chocolate cake with whipped cream (OMM on crack).

Red romaine lettuce, English cucumber, red onion, and cherry tomato salad topped with shrimp sauteed in butter and garlic. Homemade Thousand Island dressing.

The shrimp was left from Friday night scampi, so dinner was extra-easy and really good!

Dinner tonight: Pepper-Jack/American/Swiss Cheese Stuffed Chicken Breasts with Bacon (courtesy of Sam's Choice at WalMart) and asparagus sauteed in butter. YUMMY! It's been a long Monday, ladies.

Tonight I made my own chicken tenders....chicken dipped in egg then the shredded parm cheese (in the shaker). Fried them up. Sliced eggplant (to look like fries) roasted in the oven till done. These are awesome. They taste just like fries to me!! I really should have baked the chicken tenders, but I was really wanting something fried. Oh well...Ill do better next meal!

Sunlover, I LOVE that parmesan fried chicken. Sometimes nothing else will do. And what a great idea with the eggplant!

I love eggplant! I just always breaded it and fried it though. Got one the other day and thought to cut it in chunks and roast in the oven. It was delish and reminded me of french fries. So I just figured I would cut them up like fries. They did not turn out as crispy as before but they were still good. Oh and btw I get those stuffed chicken breasts from Walmat too...they are delicious. I just wish there was more than 2 in the box.

Happy Anniversary to me and the hubs today...10 years! So no cooking for me tonight. Yay! I chose Golden Corral for dinner. Not the best food, but plenty to choose from there and I love their salad bar! Looking forward to it. No cheating for me!

I think im going to have hamberger steak and a big salad or maybe cole slaw.and them sauteeded ounion sounds great...the rest of the family a burger and chips...they dont know what their missing... have a good day ladies and gents...

Artichoke and Cheese-Stuffed Chicken Breast (do you sense a pattern here?), romaine salad with cherry tomatoes, red onion, and homemade Thousand Island dressing. Side of steamed broccoli.

Vegan MIL in town.

Super yummy mushroom bisque. I sauteed one large onion, 1 1/2 pounds of sliced mushrooms, garlic, and celery in olive oil until soft. Oh, and a bit of salt. Added one cup water. Off the heat, added soy sauce and a dash of sherry. Pureed with hand blender, but left some good texture. Added fresh thyme, and two cups of unsweetened soy milk. Viola! Creamy mushroomy (and vegan!) goodness.

Baby Back Ribs! On sale at the store - I think I'll go back and get another rack. I love them, but they've gotten so expensive. I'm using Kraft Original Light barbecue sauce; I can't find the zero carb Scott's that I love in the groceries lately. I'll probably make a simple green salad to go with the ribs. YUM!

Either chili or taco salad. Haven't decided what I'm going to do with this ground beef yet.
