Lo Carb Recipes I enjoy or want to try...
 
I'm always looking for fresh ideas and anyone can post in here with their faves too. :)

Steak & Cheese boats

I use Steakumms (but use that or any other frozen sandwich steak meat.)

brown 3 or 4 sections of the frozen meat in a pan with diced onions for flavor.
salt and pepper to taste.
melt provolone cheese on top. ( i use two slices)
serve on romaine lettuce "boats"
top with mayo, jalapeno's, a little ketchup, and/or mustard.
add bacon if u like

Mexican Salad
 
Here's a recipe for my easy homemade Mexican Salad. I can't call it a taco salad because of course we know taco shells and tortilla chips have lots of carbs. With this salad, it's all the taste without the carbs!

Instructions

In a frying pan cook a pound of ground beef or turkey.
Drain meat and add 1 taco seasoning packet.
Let simmer until seasoning thickens into a sauce.
Remove from heat and top with shredded cheese.
Slice onions and green peppers and brown them in a frying pan.

Build your salad anyway you'd like using:
Sour Cream
1/3 cup of chunky Pico de Gallo (Salsa)
Jalapeno's peppers to taste.

I always build my salad by putting the onions and green peppers on the bottom, then adding ground beef and cheese, next pile on the lettuce, and top with salsa, sour cream and, jalapeno's.

Serves two.

Prep time 20 mins
Cook time 15 mins

Fried string cheese

i got the idea from http://www.genaw.com/lowcarb/fried_string_cheese.html


but i rolled it in some bacon grease first and then coated it with parmesan cheese. it was the only way to get the grated parm to stick to the string cheese. butter would probably work too.

WOW that looks good. I used to fry up grated parm cheese to make croutons for my salad.. fried cheese mmmmm LOL

ohhh i never thought about that crouton idea! i am gonna be trying that too. how did u make the "cubes" or was it just kinda loose and crumby?

SunnyDC, would you share your artichoke dip recipe? I have one I'm using, but I'd love to have yours. And did you mean you use pieces of cooked bacon as "dippers"? That's pure genius!

i just eat the frozen food brand made by TGIFriday's. it's actually pretty good. yep that's what i meant, the bacon "chips" are my dippers. bacon fried hard but not burnt and cooled off, they are easy to break into 2 or 3 pieces per strip and i usually make 5 strips. they are pretty sturdy and go well with the dip.

I'd have to proceed with caution with TGIF's spinach artichoke dip. The nutritional information says it's 2 carbs per 2 tablespoons; eight servings in the carton. Since I try really hard to stay close to Induction carb levels, that's too many carbs for me...I know I'd eat more than 2 or 3 tablespoons.:ink:

But how convenient is that! More pure genius...as long as I have several people to share it.

i made pizza with cheese "dough" from linda's website/locarbfriends and took two pics of it.

i used a 13in pizza pan covered with a piece of parchment paper (not shown) and only two eggs, not three. the slices are sturdy enough to hold in your hand.

this is the recipe i used as my guide.

Sunny that looks just like real pizza. I am going to try that. I just love all your pictures. They all look so yummy.
Pizza is a down fall for me. I usually splurge every 2-3 weeks and I know it just throws my weight back up a few pounds and then I have to work all over again to get rid of it. Besides it is not good for my diabetes. so next time I order pizza for the hubby I'll make me one of these.

Thanks again for the pictures. It gives me courage to try it.

The pizza was delicious! I will definitely be adding that to my menu! Last night i had spaghetti for dinner. Whole foods has a tofu spagheti called Shirataki noodles. I tried them last night....they taste just like regular spaghetti with only 1 net carb per 4oz serving!

good glad u tried it and enjoyed it!! i thought it was delicious too and no one could believe there was no dough.

i gotta get the tofu spaghetti "noodles". i have never heard of it so thank you!!:carrot:
