Almond Meal
 
Can anyone give me tips on using almond meal to coat fish and chicken? How do you make it stick? I have to cook on the stove top since my oven is actually a portal to Hades. :devil:

I have used an egg wash and that works pretty good...and then fried them in a cast iron skillet.

You could try a little skim milk, that will def. help the almond meal stick

No skim milk on Atkins:)
I usually mix an egg with a little heavy cream, dip the chicken or the fish in that and then coat it with the almond meal. I season the almond meal with different seasonings....garlic powder, onion powder, chili powder, italian seasoning and don't forget to add some grated parmesan cheese! Then fry in butter:drool:

Well I made the chicken tonight. I used the meat mallet to roughen up the texture so the meal would have more nooks and crannies to grab hold of. I sprinkled some Seasonal in the meal and fried it up in some canola oil. Good heavens it was tasty...chicken was juicy, not oily and the almond flavor was mild to non-existent.
