unsweetened baking chocolate question
 
Hi -

I am making some stuff with unsweetened baking chocolate and it says, for one square, 9 carbs, 5 of which are fiber but zero of which are sugar - so what are the other carbs? (If I look at 100 grams, it will show 1 gram of sugar total, which of course doesn't show up when you only look at one square - pretty minimal, anyway).

So one square = 4 Net Carbs

I think if there are >1 gm of sugar/carbs they can say it = 0 (by law) so it could be sugar.... some one correct me if I'm wrong.

What does the ingredients say? does it list sugar? you can usually tell by looking there.

Well, no, it's not sugar - as I said, it looks like there is much less than 1 gram of sugar in an ounce of chocolate (there is one gram of sugar in 100 grams of chocolate, and one ounce is 28 grams).
9 g carbs
5 g fiber
about 0.3 g sugar.

So the question is, what are the other carbs?

Complex carbs. That's what's left after fiber and sugar are subtracted out.
