Spiced Apples with Vanilla Sauce
I got this from a WW e-mail and sent it to the LA Chef for a makeover.
Ingredients:
4 medium apples, cored (use Granny Smith for tart flavor; use Gala for sweet flavor)
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 cup SPLENDA®
1/4 cup water
2 Tbsp. fresh lemon juice
2 Tbsp. fat-free sugar-free instant vanilla pudding mix
3/4 cup skim milk
Preparation:
1. Preheat oven to 350°F.
2. Using a vegetable peeler, peel a 1/2-inch horizontal strip around apples to help release juices during baking.
3. Place apples in a 9 X 9-inch baking dish.
4. Combine cinnamon, ginger and Splenda in a small bowl.
5. Place 1 tablespoon of cinnamon mixture in cored-out center of each apple; sprinkle remaining cinnamon mixture over apples.
6. Combine water and lemon juice in a cup; pour liquid around apples.
7. Bake until apples are soft when pierced with a knife, about 15 to 20 minutes; remove from oven and let cool.
8. Pour pudding mix into a medium bowl; whisk in milk to make a fairly thin sauce.
9. Place one apple on a plate and drizzle with sauce.
Makes: 4 servings
Serving size: 1 apple with 1/4c sauce
LA Exchange: 1 Fruit, 1 Condiment
