Sweet Potato Casserole
Okay - I make this for my family but it's from scratch without a recipe, so here goes... It's not rocket science, so the measurements don't have to be exact! I'll give you TWO variations too.
RECIPE 1
Fresh sweet potatoes (estimate 1/2 per person)
skim milk or FF evaporated milk
Crushed pineapple (drain well)
Vanilla
Lite Salt
Cinnamon **
Nutmeg ** ** You can use Pumpkin Pie spice instead if you have it
Splenda
Splenda Brown Sugar
ICBINB spray
Bake sweet potatoes and peel when done (or you can peel them, cube them and boil them like white potatoes)
When soft, drain well. You are going to mash these like mashed potatoes - so however you would do that... mixer, food processor, ricer, masher... whatever.
Add only enough milk to loosen the potatoes, they need to be very moist and smooth like mashed potatoes.
Add drained crushed pineapple, cinnamon, nutmeg (or pumpkin pie spice) and splenda. (Okay - here's how I'd do it... for every sweet potato you cooked, add 1/4 tsp. of spices and vanilla and 1 packet or 1 tsp of splenda)
Now you have mashed sweet potatoes with crushed pineapple in them. Spread them out in a baking dish. Sprinkle Splenda brown sugar on top and spray with ICBINB spray.
Bake 350 degrees for 30 min. or until top is getting browned.
RECIPE 2
Sweet Potatoes
Golden Delicious Apples
Cinnamon
Nutmeg (you can substitute pumpkin pie spice and omit spices)
Splenda Brown Sugar
Peel and slice sweet potatoes into 1/2" slices. (again, allow 1/2 per person)
Peel and slice Golden Delicious apples (allow 1/2 per person)
Spray baking dish with pam and layer sweet potatoes and then apples.
Spray with ICBINB spray. Sprinkle with cinnamon, nutmeg, splenda brown sugar, and bake 350 Degrees until sweet potatoes and apples are tender.
