Default Curried Cauliflower

Note: Choose cauliflower that is firm and white or creamy-white in color. Yellow leaves and spreading flower clusters indicate poor quality.

Vegetable cooking spray
1 1/2 tsp vegetable oil (I use high heat olive oil)
1/3 cup thinly sliced green onions
1 1/2 tsp curry powder
1/2 tsp garlic powder
1/4 tsp light salt
1 large bell pepper, seeded and cut into 1/4 inch squares
1 medium cauliflower (about 2 pounds) broken into flowerets
1/2 cup water

Coat a large nonstick skillet with cooking spray. Add oil. Place over medium-high heat until hot. Add green onions and saute' 1 minute. Add curry powder, garlic powder, and salt; saute' 30 seconds. Add bell pepper, and saute' 1 minute. Add cauliflower and water; stir well. Cover, reduce heat, and simmer 15 minutes or until cauliflower is crisp-tender, stirring occasionally. Yield 5 servings (about 58 calories per 1 cup serving)
