Default Low Calorie meatloaf!

I went to my Mom's house this weekend and we made a new meatloaf recipe. It was fantastic. After having it for dinner, I froze the rest and had meatloaf sandwiches. Really great tasting recipes.

Low Calorie Meat Loaf

1 lb Lean ground beef (I use Laura's 97% Lean ground beef - you could use ground turkey if you prefer)
2 c Shredded cabbage - fine
1 Medium green pepper, chopped
1 Medium onion chopped fine
1/2 cup mushrooms chopped fine
1/4 cup eggbeaters
2 tbs Chunky Salsa
1 tsp Tony Chachere's seasoning
Add black pepper to taste.
2 tbs Soy Sauce
2 tbs Worcester Sauce
Run mushrooms, onions and cabbage in food processor to cut fine. Thoroughly combine all ingredients. Shape into round loaf. Bake until cooked.
Makes 8 servings.

No Crackers or Breadcrumbs! That's the bulk of the calories/carbs from the original recipes.

Less than 2 oz. of protein a slice - not enough to be the meat serving for a meal. I'd have to have 2 servings to get 3 ounces of protein and then it's 200 calories.
