Well, my favourite way to eat cherries is just as they are
but there are a lot of things you can do with them:
Chop some cherries and layer with vanilla yogurt and granola.
Chop and add to muffins or quickbreads - a little almond extract added will taste great, too.
You could make some cherry jam

You could make cherry liqueur

The only other thing I would do with them is freeze them - remove the pits and freeze in a single layer on a cookie sheet until solid, then pack them in freezer bags. This way, you can easily add them to recipes here and there, or simply thaw and macerate them with a little sugar to make a tasty, easy topping for yogurt, frozen yogurt, or sugar-free ice cream.
HTH!
