It's so easy to get into a rut!

When I need something new, I go to some of the other forums, like South Beach and Weight Watchers, and read around until I find something I like. I am particularly fond of the Mexican recipes on the South Beach forum - yum!

Default some of my fave sites

http://www.tasteofhome.com, this is the site for light and tasty magazine though they changed the name again.

http://www.kraftfoods.com has some good light recipes that use foods we have around the house normally.

http://www.allrecipes.com has a ton of stuff and usually you can scale the recipe to the size you need.

I collect cookbooks so when I feel I am in a rut I browse through my collection to get ideas but I have also been known to browse the cookbook section at our library. They have lots of ones that I don't have at home.

Oh yea, and I browse the South Beach, Low Carb, and WW recipe forums for ideas too. I have found several interesting recipes posted there.

Orange Ginger Tofu Stir Fry (substitute chicken if you aren't a tofu fan)

1 lb tofu
1 cup fresh orange juice
¼ cup rice vinegar
1/3 cup shoyu (a kind of soy sauce, just use soy sauce if you can't find shoyu)
2 tbs canola oil
2 tsp dark sesame oil
3 garlic cloves
1 tbs minced fresh ginger
¼ tsp hot red pepper flakes
1 scallion
¼ cup chopped cilantro
1 jalapeno
5-6 mushrooms
1 orange pepper
1 carrot
1 broccoli crown
1 onion
snow peas

In a medium bowl, wish together orange juice, vinegar, shoyu, oils, garlic, ginger and red pepper flakes.

Place tofu in a baking dish in a single layer, cover with the marinade and sprinkle with the scallions and cilantro. Chop jalapeno and sprinkle on top. Marinate at least 30 minutes (up to over night).

Stir fry tofu with remaining ingredients and serve over brown rice.
