Salad St. Bayon
Serves: 4
4 large tomatoes
1 red onion
3/4 cup fresh basil
3 cloves garlic
6 black Kalamata olives, pitted
2 tablespoons balsamic vinegar
1/4 cup fresh basil for garnish
6 black Kalamata olives, for garnish
Salt and pepper to taste
Cut the tomatoes into large slices or wedges. Slice the onion into
very thin rounds and layer on the tomatoes.
Prepare the vinaigrette by placing the basil, garlic, pitted olives, and vinegar in a blender; pulse until well combined.
Pour vinaigrette over the salad and garnish with additional
basil and olives. Season with salt and pepper before serving.

Tomato-Basil Macaroni Salad
6 SERVINGS
Dressing:
1 ripe medium tomato, chopped
1/4 cup fresh basil leaves
1 small clove garlic, chopped
1/4 tsp. salt
1 Tbs. olive oil
4 cups cooked elbow macaroni or other small pasta
1/2 cup shredded carrot
1/2 cup diced red bell pepper
1/2 cup sliced scallions
2 Tbs. chopped fresh parsley
Make dressing: In food processor or blender, combine tomato,
basil, garlic and salt and process until almost pureed. Add oil and
process until blended.
In large bowl, combine remaining ingredients. Add dressing and
toss to mix. Serve at room temperature.

Summer Squash Slaw
1 small zucchini, grated
1 small yellow squash, grated
1 bunch red radishes, topped, grated
1 carrot, grated
1/4 cup diced red onion
1/4 cup diced green bell pepper
Dressing:
1/4 cup FF mayonnaise
2 tablespoons lemon juice
1/2 teaspoon dillweed
1/2 teaspoon ground black pepper
Mix all of the ingredients for the salad together in a bowl.
Combine the ingredients for the dressing until well mixed and then toss the salad.

APPLE CUCUMBER SALAD
1 pound red apples, sliced thin
1-1/2 cup sliced celery, cut in half moons
2 cups sliced cucumbers, sliced in half moons
3/4 cups raisins
1 cup sweet and sour dressing (Recipe Below)
1/2 cup chopped parsley
Toss all together and chill well. Be sure to toss apples in a little dressing as soon as they are cut to keep from discoloring. Toss again before serving.
SWEET AND SOUR DRESSING
3/4 cup apple cider vinegar
1 cup apple juice concentrate
1 tablespoon sugar (use can also use honey or sweetener)
1-1/2 teaspoons salt
1/3 teaspoon black pepper
1 tablespoon fresh minced ginger

BEAN AND PASTA SALAD
2 cups cut green beans
1 1/2 cups garbanzo beans
2 cup cooked pasta, macaroni or shells
2 T. red onion, finely chopped
1 cup FF Italian salad dressing
Toss. Season with salt and pepper to taste and toss again. Refrigerate several hours. Toss right before serving.
