Thumbs up good recipe

here is the lemon dill potatos

4 large baking potatos 8 oz each
2 tbs spoons butter (melted)
1/3 cup light dairy sour cream
1 tbs of fresh dill or 3/4 tsp of dried dill
4 tsp lemon juice
1/2 tsp salt
1/8 tsp of pepper
milk (optional)
lemon wedges (optional)

1 scrub potatos and pat dry, prick them with a fork. bake on 425degrees for 40 to 60 min or untill tender. let stand for 5 mins

2 cut potatos in half (length wise) and gently scoop out each potato half leaving a thin shell. place potato pulp in a large mixing bowl add one tbs butter, sour cream, dill, lemon juice, salt, and pepper. With an electric mixer on low speed beat untill smooth. if nessesary stir in 1 to 2 tbs of milk. spoon the mixture into the potatos shells dividing evenly among 8 shells. drizzle potatos with remaining butter.

3 bake on 425 degrees for 20 to 25 min or untill lightly browned. if desired serve with lemon wedges
