Default Recipes to Share!!!

Chicken-n-Biscuits

Servings | 4
Estimated POINTSŪ value per serving | 6
Course | Main Meals

Ingredients

1 can cream of chicken soup
1/4 c. fat free sour cream
1 t. dried minced onion
1 t. dried parsley
3/4 c. frozen peas
8 oz. can sliced carrots, drained
8 oz. diced cooked chicken breast
1-7.5 oz tube buttermilk biscuits

Instructions

In a medium saucepan combine cream of chicken coup,sour cream,minced
onion, & parsley. Cook over medium heat, stirring often, until it is
hot & bubbly. Add peas,carrots, & chicken and mix well to combine. Spray
an 8x8" pan with nonstick cooking spray and spread mixture evenly into
pan.
Separate biscuits and cut each into 4 pieces. Evenly sprinkle pieces
over the top. Lightly spray with butter flavored cooking spray. Bake at
375 for 20-25 minutes until top is golden brown. Lightly spray with
butter flavored spray. Let sit 5 minutes.

Baked Yams

4 cups of cooked yams,,shmooshed down,,,
1 tsp of splenda
1/4 cup of half and half

place in baking dish that has been sprayed

slice 2 apples that have been peeled
place over the yams
sprinkle cinnamon and more splenda for taste..
bake for 1/2 hr at 350...give or take..
Now if you can find brown splenda that would work nicely.
Hubby loves the yams with LOTS of marshmellows... I gag at the thought of eating that so I tried to compromise,,,he doesn't like this way but the rest of us totally love it!

Yams has the same points as potatoes...
And an apple so really you divide this into 6 servings you are looking at 1 point each

I just cooked this recipe for tonight's dinner:

Creamy Veggie Risotto

1 1/2 cup Arborio rice
1 cup of each zucchini, mushrooms, carrots, peas (cubed)
1 onion chopped
2 stalks celery chopped into cubes
1 chicken broth cube
2 cups water
1 cup skim milk
2 tbsp reduced calorie margarine
4 tbsp fat-free parmesan cheese
1 tsp dried minced garlic
salt and pepper to taste

Mix milk and water in a bowl, set aside. Add margarine, Arborio, broth cube and 1 cup of water/milk mixture to a deep saucepan, stir well and bring to boil. Reduce heat and allow rice to absorb most of the water mixture. Add water 1/4 cup at a time making sure you stir rice frequently. Don't allow it to dry up. Takes about 30 mins to cook.
In another pan sauté the veggies and onion together until tender. Add to the rice mixture just before its nearly cooked. Add parmesan cheese, salt and pepper. Let stand for 10 minutes and enjoy!
Yields 6 servings @ 5 points each
