Red face Jicama-Black Bean Salad

-1 can black beans, rinsed and drained
-2/3 C peeled and diced jicama
-1/2 celery stalk sliced thin
-1/4 C diced red pepper
-2 T chopped cilantro


Dressing:
-3 T olive oil
-1 T vinegar
-1 tsp mined garlic
-1/2 tsp ground cumin
-1/2 tsp salt
-1/4 tsp cayanne pepper
-1 tsp splenda ( or 1/2 packet)

Whisk dressing ingredients together then toss with the salad ingredients. Cover and let sit in fridge for at least one hour to blend flavors. Serves 3 as a side dish.

This is so good...and I don't even like cilantro but it works perfect here.

It's a root vegetable but it's allowed on P1. It has a crispy light taste...sort of a cross between a turnip, a pear, and an apple. It's really refreshing and very low in calories. If you can't find it you can just increase the celery amount. I've had it both ways and like them both.

Jicama..reminds me of an apple or a white potatoe. I made this without the red pepper (forgot!) & it was yummy!! I found my jicama next to the turnips. Thanks for the recipe

awesome awesome awesome!!

I did not use the celery b/c DH doesn't like it, so I threw in yellow bell pepper instead and everyone really liked it.

I have some leftover so that makes me happy

Jicama is pretty good - i was really surprised at the mild flavor.

I bought my first jicama today, can't wait to try it!!

Even though it's for lunch tomorrow, I HAD to try it tonight. YUM!! I thought while making it why there wasn't onion in it, but I'm enjoying it as is...although I will add in more beans .
